During the fall and winter when it gets dark early and the weather is chilly, I love curling up to bottomless bowls of soup.

Creamy vegetable soups are some of my favorites! Sweet Potato Soup always gets the limelight, but I enjoy creamy carrot soup even more! 

Carrot soup is naturally sweet, a touch earthy, and pairs magnificently with Thai flavors like ginger, cumin and coconut milk. That’s the route I’m taking with this carrot ginger soup recipe!

The recipe contains no cream, butter or oil. Simply all squeaky clean ingredients that leave you feeling nourished and happy.  The texture is pillow-y smooth and the flavor is sweet and subtly curry-like with a little kick.

Prime rib is generally accepted as the alpha omega of all the beef cuts. And for a great reason! It is tender, loaded with flavor, and has the most delightful drool-worthy crispy fat layering the outside.

Cooking large pieces of meat can be intimidating, but what I’ve learned over the years is the bigger the better. 

I say that somewhat in jest, but also somewhat seriously. 

Large cuts of meat typically include a decent amount of fat content, which helps lubricate the meat throughout the cooking process and results in tender, delicious meat.

In addition, larger cuts are typically cooked for a longer period of time (the longer, the better 😉 ), again resulting in mouth-watering succulent meat.

I recently had a revelation that I could likely eat stuffed squash for dinner every single night during the fall and winter months and never get tired of it.

Just think of all the combinations and permutations one can come up with to create so many different meals out of stuffed squash! 

For starters, there are many varieties of winter squash, in addition to all sorts of proteins, grains, legumes, fruit, vegetables, herbs, leafy greens, cheese, nuts, seeds and more!

What a lovely combination we’ve stumbled upon here!

I mentioned a few months ago I’ve been sweetening some of my treats using solely bananas, which is what is going on here. Look at these like healthy carrot cake cupcakes…or banana cupcakes…or healthy banana carrot muffins. 

Whatever you want to call them, they’re here for your snacking, breakfasting, desserting pleasure. 

All things considered, these muffins are grain-free, dairy-free, oil-free, contain zero added sweetener, are paleo-friendly and are absolutely delicious!

If you’d like, you can do as I did and frost the muffins using my Vegan Cream Cheese Frosting recipe. This gives the muffins a cupcake feel for a more decadent approach!

Do note, that the cream cheese frosting is sweetened with pure maple syrup, so you would need to skip the frosting to keep these sugar-free, or use sugar-free sweetener in the frosting.

We’ve all had caramelized onions, but have you ever tried caramelized cabbage?

Truth be told, I couldn’t tell you whether or not caramelized cabbage is a thing. I dreamt it up one day while I was thinking about making a cabbage stir fry and caramelized onions were simultaneously on my mind.

I thought it brilliant to slowly cook sliced cabbage until it was softened yet slightly crispy and deeply golden-brown for a crazy flavorful approach to the otherwise bland vegetable.

And it’s so easy to prepare! If you can caramelize an onion (which we will be doing in this recipe, too), then you can caramelize a cabbage!

The way I see it, caramelized cabbage can be used in all sorts of ways – as a straight up vegetable side dish, a condiment, topping for sandwiches, burgers, steak, or chicken. I would even use it in burritos, grilled cheese sandwiches of breakfast sandwiches. Go wild!

Cabbage is neutral in flavor, making it ideal for dishes using big bold flavors like onion, garlic, and bacon. It doesn’t take much to spruce it up and make it extra palatable.
