You may have noticed a theme with my snacks section of this site. Let’s face it – they’re mostly nut-based and they’re mostly balls. The amount of snack recipes I share in comparison to main dishes is pretty dismal by virtue of the fact that I’m not a big snacker.
But when it comes to nuts, seeds, and dried fruit all balled up together in an energy bite? Sign me up.
When I head out of town for a long road trip or go for a long jaunt in the mountains, I’ll often snag some balls in case I have to go more than a few hours between meals. I don’t rely on store-bought snacks, as I find they contain too much sugar and/or contain ingredients I try to avoid.
For this rendition of energy balls, I used all superfood ingredients to generate a ball that is jam packed with healthy fat, antioxidants, minerals, and all sorts of health benefits. PLUS they taste like blueberry chocolatey goodness, which is a major win in my book.

As you know, I’m a daily drinker of the bulletproof coffee, but from time to time, I enjoy an afternoon homemade coffee treat such as a Pumpkin Spice Latte, or an Eggnog Latte. While I do enjoy a nice holiday-inspired treat, I’d choose a hot beverage over a Christmas cookie if you can believe it.

Sometimes that special something is straight up coffee and whisky during a day of snowboarding, and sometimes that special something is an eggnog latte.
After whipping up The BEST Vegan Eggnog a couple weeks back, I went on an Eggnog Latte kick (using decaf coffee, because girl’s gotta sleep, you know?).

Alright, okay, I’ll divulge…Pumpkin cheesecake has always been one of my favorite desserts for not just the holidays but all of fall and winter. I have a long-standing history of making it multiple times during the cold months.
Both the pie crust and the filling are prepared using a food processor or blender, and there’s no oven space necessary – a huge win when you’re preparing a big feast and oven real estate is in short supply.
Plus, you can make this recipe far in advance (up to 7 days) and store it in the freezer until your holiday gathering. Just note the cheesecake will take a few hours to thaw, so be sure to work thaw time into your planning process.
The pumpkin filling is made using soaked raw cashews (just like a vegan cheesecake), pureed pumpkin, coconut milk, coconut oil, pure maple syrup, fresh ginger, pumpkin pie spice and cinnamon. Blending all these ingredients together results in a silky-smooth, thick and creamy filling that tastes just like Thanksgiving should.
While I love using raw nuts (pecans and walnuts are my favorite) and dates for the crust, you can go with your favorite gluten-free or grain-free pie crust. I’m super into the nutty texture of the crust and think it lends amazing flavor to the pie.
