This fabulous meal of poached eggs in spiced tomato sauce is warm, rich, and satisfying, while staying nice and healthful.

You don’t need to be an expert at poaching eggs or have any background in African or Middle Eastern cuisine to become a Shakshuka aficionado!

When all is said and done, you’re basically making a one-pot meal in a skillet. It’s very similar to making soup or stew!

What is Shakshuka?:

Shakshuka is a classic North African and Middle Eastern meal of eggs stewed in a generously-spiced sauce made from tomatoes, red peppers, and often harissa paste (which is a combination of roasted red peppers, garlic, caraway and coriander seeds, cumin, and herbs).

It is eaten any time of the day – breakfast, lunch, or dinner!

Rotisserie Chicken Soup

In the event you have a massive craving for soup, need the guarantee that it will turn out spectacular, AND are all about making cooking the easiest thing you’ve done all day, then this Rotisserie Chicken Soup is for you!

This is truly how lazy I am. 

Step 1: buy a fully-cooked chicken. Step 2: toss it in a pot with broth and veggies, and WHAMO! Dinner for days!

If you follow me on Instagram, you know I’ve been making chicken soup using store-bought chicken a lot recently.

I’m all about making food from scratch, but here’s the thing: store-bought rotisserie chicken is just SO GOOD!

Plus, it makes the soup making process so quick and easy, and you’re guaranteed to end up with an amazing result.

I love that rotisserie chicken is super moist and flavorful, resulting in amazingly comforting soup with the most tender, delicious meat.

My trick to preparing soup relatively quickly is sautéing the veggies first. I simply cook the vegetables until they have softened but are still al dente before adding the broth, seasoning, and/or animal protein. 

In this case, since the chicken is already cooked and has tons of flavor, the soup is done once it has reached a full boil and the vegetables have reached your desired done-ness! 

For me, the whole process takes roughly 30 minutes.

I often eat my chicken soup with rice. If you’d like to cook rice into your soup, add 1/3 cup of brown or white rice and allow the soup to cook long enough to cook the rice – about 30 minutes.

Thai stir fry noodles and Thai curry are simply irresistible to me. As I mentioned a couple months ago in my 30-Minute Thai Curry Noodles recipe, I often have a difficult time choosing between the noodle and the curry. What a loaded decision!

This to say, combining Thai noodles and Thai curry is what we’re doing in this situation and turning it into a delightful soup. 

Because life is too short to not drink curry.

All joshing aside, this magnificently comforting Thai soup recipe is gluten-free, soy-free, packed with veggies, and is crazy filling and satisfying. Plus, it’s fun to make!

Sicilian Chicken Soup (gluten-free)

Sicilian Chicken Soup made quickly on the stove top in less than an hour! This hearty chicken soup recipe is easy to make and comforting on chilly winter nights. I have included instructions for Instant Pot and Slow Cooker in this post as well!

One of my favorite recipes on my site, which I posted way back in 2012 is my Sicilian Meatball Soup with Cabbage. My mom’s life partner, Carlo, is Sicilian, and has inspired me throughout the years to cook up authentic Sicilian-style meals.

What is Sicilian Chicken Soup?

Traditional Sicilian Chicken Soup is prepared using an entire whole-body chicken. Doing so results in a richly flavored soup packed with health benefits! To prepare the soup, you butcher a chicken and cook it in a pot with water to make a broth.

You then remove the chicken, chop the meat into pieces and add it back to the pot along with onion, celery, carrots (the holy trifecta), diced tomatoes, and pasta (typically ditalini noodles). Fresh herbs and potatoes are also typically incorporated as well.

While I love preparing whole body chicken, I thought I would take a quicker approach to this classic recipe, as I know many of you are strapped for time when it comes to meal prep. 

In the interest of making meal prep easy, I simply use boneless chicken thighs for the soup. The end result is still a delicious, comforting meal, but the process requires less than an hour from start-to-finish.

One Pot Indian Chicken Biryani

Have you ever tried Biryani?

Biryani is a classic Indian dish, which includes aromatic basmati rice studded with raisins, pine nuts, and/or almonds. It typically includes some form of animal protein, such as lamb, chicken, beef, pork, or shrimp.

When I go out for Indian food, I always order a biryani dish – it’s always so difficult to decide between the lamb, chicken or shrimp for me! 

While it may seem like a complex dish, making chicken biryani at home is a cinch! It requires a long list of ingredients, most of which are spices, but don’t let that fool you. There is nothing complicated about preparing the meal, and all you need is one large skillet.

In fact, I posted a One-Pot Chicken Biryani  recipe years ago, but have since modified it to be even easier wth fewer ingredients.

The dish is often served with a yogurt raita sauce, which I absolutely adore! I don’t often make raita myself, because it contains dairy and I typically limit my intake to certain types of dairy. BUT just know you can absolutely whip some up for your own adventure.

The end result is a flavorful rice dish with a nice protein infusion, which you can either treat as a main dish or a side dish. It makes for a lovely evening in for those times you’re craving takeout.
