Beef Bourguignon. Wow, what a topic! I almost didn’t want to touch this classic dish due to its notoriety. To me it seemed like one of those dishes that could only be touched by the most well-esteemed of highly-trained chefs. 

Well, I’m happy to say, I put on my big girl bitches and dove into the lovely land of Bourguignon. Not only is it not at all intimidating, but it’s just one of those feel-good meals that we should all be enjoying during the chilly fall and winter months.

What is Beef Bourguignon:

Beef Bourguignon (also known as Beef Burgundy, bœuf à la Bourguignonne or bœuf bourguignon in France) is a classic French beef stew. Tender chunks of meat are smothered in a thick sauce made of red wine (or burgundy) and beef stock that is typically thickened by a roux (butter and flour mixture). 

Traditionally, the dish includes onions, carrots, herbs, mushrooms, and bacon. Some people add potatoes to the stew to make it even more filling and inviting.

When I was a kid, I had the metabolism of a wolverine. Protein, carb and fat-rich meals that stick to your ribcage like Lasagna, Tuna Noodle Casserole, and Hamburger Helper were some of my favorites because I was guaranteed to feel full after those dinners – a rare occasion indeed.

And Hamburger Helper? The relationship was fiery.

There’s something very nostalgic about a childhood meal and most of us begin craving comfort foods in the fall and winter when the weather gets chilly.

Or in my case, all the time. Girl loves to feel FULL!

What is Hamburger Helper?:

Most of you are already very familiar, but in case you’ve never tried it, Hamburger Helper is a beefy noodle dish in a creamy seasoned sauce, resulting in a dinner that just sticks straight to your ribcage. It is DELICIOUS. 

In order to make iconic Hamburger Helper at home using ingredients that sit well with me, I took many liberties so that I could create a meal I felt good serving both myself and others. This is how it goes..

How This Recipe Differs From Traditional Hamburger Helper:

  • First and foremost, there is no pasta involved. I swapped it out for rice.
  • The recipe is entirely dairy-free, but you can easily use milk/cream and/or cheese (see Recipe Adaptations) section below.
  • Made in an Instant Pot! Traditionally, my parents made hamburger helper on the stove top, and sometimes finished it off in the oven with more cheese. This recipe requires almost zero effort, hovering, minimal cleanup, and is so QUICK and easy!

Instant Pot Rice Pudding (Dairy-Free)

An Instant Pot rice pudding recipe made dairy-free with minimal pantry ingredients. This easy rice pudding recipe is vegan (no eggs required!!), hardly any effort to prepare in the pressure cooker, is thick and creamy and the perfect dessert to share with the whole family. 

This post includes instructions on how to make traditional rice pudding (or arroz con leche) using milk and condensed milk.

 

Rice pudding is one of those desserts I tend to forget about and then rejoice when I remember its existence. Thick, creamy, perfectly sweet and cinnamony with a nice little chew…it’s a pudding lover’s dream! 

Many countries have their own take on rice pudding. For instance, arroz con leche in Mexico and South American countries, Kheer in India, Philippino Biko, and Guatemala, Japan, Sweden, Germany, Newfoundland, Greece, and Portugal all have a unique take on the dessert.

In case you have never tried rice pudding, I’ll give you the quick run down. Made with white rice, milk, sugar, cinnamon, and sometimes raisins, the pudding has a thick texture from the combination of milk and starch from the rice in addition to a bit of a chewiness. You could compare the concept to tapioca pudding, but with rice instead of tapioca pearls.

Rice pudding is traditionally served chilled, but it can also be served warm. I recommend preparing the recipe in advance to allow for chill time.

In order to make dairy-free rice pudding, I use full-fat canned coconut milk and use pure maple syrup instead of sugar. I have provided options to change up the milks and sweeteners later in the post.

Rice pudding is so incredibly easy to make and is fun to share with friends and family, AND it is even easier to make it in the Instant Pot than the stove top. It is a wonderful dessert that can be enjoyed any time of the year, and is awesome for celebrating Cinco de Mayo (although be sure to call it “arroz con leche,” or in this case, “arroz con leche de coco.” 😉

Instant Pot Shredded Chicken Tacos with pico de gallo and cabbage slaw

Chicken Taco Toppings: I like pico de gallo, green salsa, and a homemade quick cabbage slaw. Pressed for time? Buy it all pre-made! I buy the pico and green salsa from the store and make the cabbage slaw in 2 minutes flat. 

The slaw only requires two ingredients: cabbage and lime juice. And sea salt. BOOM slaw.

You can also go with cheese, onion, cilantro, and/or avocado for topping. Homemade pineapple or mango salsa work great as well!

You can go with corn or flour tortillas or grain-free tortillas to keep the tacos low-carb and/or paleo-friendly.
