What a lovely combination we’ve stumbled upon here!

I mentioned a few months ago I’ve been sweetening some of my treats using solely bananas, which is what is going on here. Look at these like healthy carrot cake cupcakes…or banana cupcakes…or healthy banana carrot muffins. 

Whatever you want to call them, they’re here for your snacking, breakfasting, desserting pleasure. 

All things considered, these muffins are grain-free, dairy-free, oil-free, contain zero added sweetener, are paleo-friendly and are absolutely delicious!

If you’d like, you can do as I did and frost the muffins using my Vegan Cream Cheese Frosting recipe. This gives the muffins a cupcake feel for a more decadent approach!

Do note, that the cream cheese frosting is sweetened with pure maple syrup, so you would need to skip the frosting to keep these sugar-free, or use sugar-free sweetener in the frosting.

Surrender isn’t for the weak. It’s for the courageous. When we allow life to be as it is, we’re receptive to its lessons. If we try to resist, that which we resist persists.

So we can take a collective moment, you and me, to take a deep breath, exhale out our need for control, really take a look around and find something beautiful we can appreciate.

You are your own leader.

And streusel topping always improves a muffin. Always. That is a fact.

These zucchini muffins are studded with both chocolate chips and walnuts for that ultra fluffy, moist, cinnamony, chocolatey treat with a little texture and spunk. They come together quickly, are perfect for sharing, and make for a lovely breakfast or snack. 

If you have made zucchini bread or zucchini muffins in the past, you may already know that many recipes call for draining the zucchini of water before adding it to a recipe. While this may not seem like a big deal to some of you, I find it to be an ultra inconvenience, because I like hitting things hard and fast, you feel?

SO when it comes to zucchini baked goods, I always factor the zucchini moisture into the equation. I compensate for it, if you will. Don’t fight it, join it, is my motto when it comes to zucchini splooge.

The point is, there is no draining of the zucchini necessary, and this recipe comes together very quickly and requires just one bowl. You basically add the ingredients into the bowl in stages, just adding to the ease of preparation profile here. In fact, it’s so easy, it is a great baking project for children. AND it’s even easier to clean up!

Avocado Chocolate Muffins (Paleo)

Grain-free Avocado Chocolate Muffins made with coconut flour, ripe avocados, coconut sugar, and cocoa powder are a gluten-free moist and fudgy treat! Plus, they are paleo friendly and can easily be made keto.

You know when you go into something having zero expectations, and come out of it feeling like a proper Greek Goddess?

That is how I felt after baking these muffins.

All the stars? Aligned.

Truth be told, these muffins did require two attempts, as the first batch turned out like brownies. Amazing, fudgy, sinfully delicious brownies, but still… brownies, not avocado muffins.

So reluctantly (insert sarcasm), I baked a second batch, and BOOM a muff was made.

Nothing makes you feel better about yourself than baking chocolate muffins out of overly ripe, otherwise trash-worthy avocados.

The greatest part about this recipe is it uses those unwanted avocados that should truly not be used in any other way lest you’re a glutton for punishment.

You don’t necessarily want the avocados to be brown, grody and rotten, but this is a good place for those super mushy, not amazing tasting ripe avocados that you wouldn’t dare leave raw.
