A few months ago, I whipped up these garlic roasted potatoes for a family dinner, and of course they were well received. Carbs + butter + garlic is the ultimate trifecta for pleasing friends and family.

This easy roasted potatoes recipe results in perfectly tender yet crispy potatoes with that buttery garlic-herb carb bliss.

Have you roasted fingerling potatoes? I kind of love how easy they are to prepare because you don’t need to chop them first. These days, I go the path of least resistance, so if I can skip a step, I AM IN!

I’ve found roasted potatoes turn out best when twice cooked – first boiled to soften them up quickly, and next roasted to crisp them up and finish cooking them through.

You get that golden-brown feature from roasting them in the oven, but that delightful soft texture on the inside from the boiling.

Truth be told, I couldn’t tell you whether or not caramelized cabbage is a thing. I dreamt it up one day while I was thinking about making a cabbage stir fry and caramelized onions were simultaneously on my mind.

I thought it brilliant to slowly cook sliced cabbage until it was softened yet slightly crispy and deeply golden-brown for a crazy flavorful approach to the otherwise bland vegetable.

And it’s so easy to prepare! If you can caramelize an onion (which we will be doing in this recipe, too), then you can caramelize a cabbage!

The way I see it, caramelized cabbage can be used in all sorts of ways – as a straight up vegetable side dish, a condiment, topping for sandwiches, burgers, steak, or chicken. I would even use it in burritos, grilled cheese sandwiches of breakfast sandwiches. Go wild!

Cabbage is neutral in flavor, making it ideal for dishes using big bold flavors like onion, garlic, and bacon. It doesn’t take much to spruce it up and make it extra palatable.

This is the story all about how I tried making Asian Meatballs and they just wanted to be burgers. And the rest is history.

These burgers are infused with ginger, green onion, coconut aminos, garlic and sriracha, making them ULTRA flavorful!

In my humble opinion, a burger isn’t a burger without some funky fresh flavors added in, and these Asian-inspired flavors are KILLA!

I add an egg and some tapioca flour to the burger meat, which makes it extra spongy…kinda like meatloaf. Or meatballs. But in burger-form. If you’re not into it, no worries…simply omit the egg and tapioca flour, no harm, no fowl.

To go along with these burgers, I whipped up some silly simple zucchini noodles. Are we still zoodling? Honestly, zucchini noodles happen maybe once a year for me, because that’s how lazy I am…I’m too lazy to zoodle.

Anyway, these noodles. They’re sauteed in ghee, coconut oil, garlic, coconut aminos (or liquid aminos), and sriracha.
