I recently had a revelation that I could likely eat stuffed squash for dinner every single night during the fall and winter months and never get tired of it.

Just think of all the combinations and permutations one can come up with to create so many different meals out of stuffed squash! 

For starters, there are many varieties of winter squash, in addition to all sorts of proteins, grains, legumes, fruit, vegetables, herbs, leafy greens, cheese, nuts, seeds and more!

Instant Pot Hamburger Helper With Rice – a dairy-free, healthier version of classic Hamburger Helper for an amazingly filling dinner.

When I was a kid, I had the metabolism of a wolverine. Protein, carb and fat-rich meals that stick to your ribcage like Lasagna, Tuna Noodle Casserole, and Hamburger Helper were some of my favorites because I was guaranteed to feel full after those dinners – a rare occasion indeed.

And Hamburger Helper? The relationship was fiery.

There’s something very nostalgic about a childhood meal and most of us begin craving comfort foods in the fall and winter when the weather gets chilly.

Or in my case, all the time. Girl loves to feel FULL! 

Enter: Homemade Hamburger Helper.

What is Hamburger Helper?:

Most of you are already very familiar, but in case you’ve never tried it, Hamburger Helper is a beefy noodle dish in a creamy seasoned sauce, resulting in a dinner that just sticks straight to your ribcage. It is DELICIOUS. 

In order to make iconic Hamburger Helper at home using ingredients that sit well with me, I took many liberties so that I could create a meal I felt good serving both myself and others. This is how it goes..

How This Recipe Differs From Traditional Hamburger Helper:

  • First and foremost, there is no pasta involved. I swapped it out for rice.
  • The recipe is entirely dairy-free, but you can easily use milk/cream and/or cheese (see Recipe Adaptations) section below.
  • Made in an Instant Pot! Traditionally, my parents made hamburger helper on the stove top, and sometimes finished it off in the oven with more cheese. This recipe requires almost zero effort, hovering, minimal cleanup, and is so QUICK and easy!

30-Minute Teriyaki Beef Skillet with Vegetables

If you have been following along my blog, or if you watch my Instagram stories, you know this is the exact type of meal I make every single day (often for breakfast, lunch, and dinner!).

Skillet. Animal Protein. Veggies. Baddabingbaddaboom NOURISHMENT!

Toss a heaping pile of it in a bowl with some steamed brown rice and you’re looking at the object of my affection.

For this rendition of Julia’s everyday eats, I browned up some ground beef, through in some veggies and my homemade Paleo Teriyaki Sauce, and then drooled all over myself while enjoying it.

It’s so crazy simple, so easy to adapt using various proteins and vegetables, and so nourishing for your body.

My pro tip for making this skillet in under 30 minutes? Chop as you go. While you can chop all of the vegetables ahead of time before you start cooking, I like adding mine in at various times depending on their hardiness.

One Skillet Ground Beef and Wild Rice

One skillet ground beef and wild rice with onion, garlic, bell pepper and rainbow chard is a quick and easy one-pot meal that results in a lovely well-balanced dinner.

When it comes to cooking dinner at home, I generally aim for three things: 

1.) Affordability – I like to keep it inexpensive…no need for pretention in my household! 

2.) Nutrient-Dense  – I go for balanced meals that contain all three macros – protein, fat, and carbs. Bonus points for fiber, vitamins and minerals! I find that meals that hit all three are very satisfying 

3.) Quick to Prepare – While I love cooking, I don’t typically want to spend a huge chunk of time on cooking, so I try to keep it around 30 minutes, or at the very most, 1 hour.

My skillet recipes fit all three criteria, and this ground beef and wild rice recipe is no exception!

Onion, garlic, bell pepper, ground beef, wild rice, broth, and rainbow chard is all we need to make this beauty happen! The combination of flavors is fresh and the meal itself is super satisfying! You can serve it up with a side salad or roasted veggies if you’re looking for even more vegetable power!

All you need is full-fat canned coconut milk, red curry paste (yes, this is store-bought, yup, we’re going for easy peasy here!), fresh ginger, and a touch of fish sauce. Simply heat it all up on the stove top and use it for all your red curry needs.

Which brings me to my next point: this red curry sauce is versatile AF! Use it to your heart’s delight to add Thai flair to any of your meals.
