Creamy roasted acorn squash soup – the soup you should carry in your thermos all winter long!

Roasted Acorn Squash Soup | www.theroastedroot.net

Whoa (said like Joey Lawrence on Blossom)! So much has been going on behind-the-scenes, I don’t even know where to begin! A lot of great things happened this weekend…fancy a visual, instagram-style?

Good Answer!

Friday, my cookbook, Delicious Probiotic Drinks arrived in the mail! I blew a gasket in the most pleasant way. I’ve been so anxious to see my book in the flesh. Being able to hold it, flip through it, and cry real tears all over it has been an unparalleled experience. It’s still surreal to me. If you pre-ordered the book, you’ll be receiving it soon if you haven’t already. If you would like to order the book, you can do so through Amazon.com or Barnes & Noble.  I’ll also be giving away copies right here next week to celebrate the official release!

What else? I came across a questionable butternut squash and decided to use it anyway (…worked out great!), and snapped photos for The Pasta Shoppe.

I also got to take a gander through the first pass of my second cookbook, Let Them Eat Kale!, which is looking lovely,  thanks to my stellar editor!

I then stood in the woods so I could show you a picture of myself holding book #1. I then stood in front of a fence so I could model one of the items I received in my latest Stitch Fix shipment.

Whoa (Said like Joey Lawrence on Blossom)! That was a lot of update and a lot of instagram. Maaaaaybe we should take a break to give ourselves the opportunity to miss each other and allow our hearts to grow fonder? Nah!

What was I saying about soup? Oh yes – I would like to carry roasted acorn squash soup in my Darkwing Duck thermos all winter long. It’s simple, clean, and nutritious. Pop over to Oh My Veggies to fashion yourself up a batch of Roasted Acorn Squash Soup!

I love squash and I actually haven’t tried an acorny one…..I keep looking at them and wondering if I should step out of the kabocha and butternut and spaghetti comfort zone, aaaanddd this could be that kick in the butt I have been needing!

    1. Dooooo it! You will love the acorn! Spaghtti sqarshes are marvelous, but they don’t make soup the way an acorn squarsh does.

  5. What an amazing feat to have you holding your book in your hands and reminiscing how much sweat and effort you exerted to it. I will be looking forward to see your book in Barnes. I am not a very big fan of squash, but I might try this one, but so scared to do so. I do not know what relationship I had with squash in my past life to make me not a fan of it.

    1. Thanks my dear! And yes, this is a very squash-y soup…so if you’re not a fan of squash, I’d steer clear. I love the crap out of this soup, but I definitely don’t think the squash-averse would feel the same. 😉
