Mediterranean Rotisserie Chicken Salad recipe with sun-dried tomatoes, kalamata olives, red onion, and a touch of mayonnaise for a protein-packed chilled lunch! Enjoy it on top of a green salad or as a sandwich or wrap.

During the warmer months of the year, I’m all about protein salads for lunch, like chicken salad, tuna salad, and chickpea salad.
Well, recently, I got smart and decided to skip the cooking and simply use store-bought rotisserie chicken. Not only does this result in ultra tender chicken salad, but it saves a lot of time and requires minimal effort!
In 15 minutes or less, you’ll have chicken salad to enjoy throughout the week for quick lunches or a quick weeknight meal. Plus, it is plenty flavorful with the tasty briny olives and tangy sun-dried tomatoes added in.
This is one of those bare bones recipes that can be dressed up using various additions such as artichoke hearts or roasted red bell peppers.
Get creative with your add-ins, and enjoy it as a sandwich, salad, or a wrap! The best part? The simple ingredients can be found at any grocery store.
Ingredients for Mediterranean Rotisserie Chicken Salad:
Rotisserie Chicken: The star of the show! Pick up a rotisserie chicken from the grocery store to save time with this easy chicken salad.
Mayonnaise: The only ingredient needed to make a creamy dressing. Mayo is here to bring all of the ingredients together so that everything sticks. Mayonnaise adds richness and creaminess, so choose your favorite kind! I use a small amount of avocado oil mayo and I tend to keep it pretty light.
Sun-Dried Tomatoes: Brings soft bursts of tangy rustic tomato flavor, which contributes to part of the “Mediterranean” vibe. Add more if you love them!
Kalamata Olives: Big briny flavor comes from kalamata olives, which also lends flavor to our Mediterranean theme.
Sea Salt and Black Pepper: Season the chicken salad to taste using salt and pepper.
Ways to Customize:
- More Mediterranean Goodies: Add ⅔ cup of chopped artichoke hearts and/or 1 to 2 tablespoons of capers. You can also add a drizzle of pesto sauce or feta cheese.
- Add Vegetables: If you love fresh vegetables like crunchy celery, carrots, green onions, fresh bell pepper or roasted bell pepper in your chicken salad recipes, feel free to add them in.
- Yogurt Swap: Use ½ cup to ⅔ cup of plain Greek yogurt instead of mayonnaise for fewer calories and fat.
- Season it Up: Add 2 teaspoons of curry powder, or sprinkle in some lemon pepper or garlic powder to mix up the flavors.
- Use Leftover Chicken: Rather than leftover rotisserie chicken, use any kind of leftover chicken you have on hand.
How to Make Rotisserie Chicken Salad:
Shred your rotisserie chicken to your desired consistency. You need four cups. Depending on the size of your chicken, that may only require the chicken breast meat, or you may need some of the dark meat too.

Transfer the shredded chicken to a large bowl, along with the rest of the ingredients.

Mix well until combined. Taste the chicken salad for flavor and add more sun-dried tomatoes, olives, mayo, or salt to your personal taste. You can also add a drizzle of lemon juice, lime juice, apple cider vinegar, or some Dijon mustard.

Serve the rotisserie chicken salad over a bed of lettuce for a low carb approach, or make a sandwich or lettuce wraps using your favorite bread or tortilla. I like making open-faced sandwiches using buttered toast. Enjoy it alongside my Kale Slaw or Broccoli Slaw for an infusion of veggies for a healthy lunch option.
Store leftovers in an airtight container in the refrigerator for up to 3-5 days.
