Mediterranean Rotisserie Chicken Salad

This easy high protein rotisserie chicken salad recipe is packed with flavorful goodies like sun-dried tomatoes, kalamata olives, and red onions. Add in some chopped artichoke hearts and capers for even more flavor!

Ingredients

  • 4 cups rotisserie chicken shredded
  • cup mayonnaise*
  • cup sun-dried tomatoes drained and chopped
  • cup kalamata olives finely chopped
  • 3 Tbsp red onion finely chopped
  • ½ tsp sea salt to taste
  • ¼ tsp black pepper to taste

Instructions

  • Shred your rotisserie chicken to your desired consistency. You need four cups. Depending on the size of your chicken, that may only require the chicken breast meat, or you may need some of the dark meat too.
  • Transfer the shredded chicken to a large bowl, along with the rest of the ingredients. Mix well until combined. Taste the chicken salad for flavor and add more sun-dried tomatoes, olives, mayo, or salt to your personal taste. You can also add a drizzle of lemon juice, lime juice, apple cider vinegar, or some Dijon mustard.
  • Serve the rotisserie chicken salad over a bed of lettuce for a low carb approach, or make a sandwich or lettuce wraps using your favorite bread or tortilla. I like making open-faced sandwiches using buttered toast.

Notes

*Adjust the amount of mayonnaise to your personal taste. I use less mayo when I make chicken salad recipes with rotisserie chicken because I find rotisserie chicken is rich enough. Nevertheless, if you prefer more mayo, add it in!
