Dairy-Free Keto Coffee Cake

Dairy-Free Keto Coffee Cake made with almond flour and coconut flour is a perfectly sweet, moist and fluffy treat! Enjoy a piece with your morning coffee or tea.

Evidenced by the many recipes for coffee cake on this site, it’s safe to say I have a bit of an obsession.

Rich, fluffy, buttery, moist, subtly sweet and ultra cinnamony, who could possibly resist??

While my previous coffee cake recipes are all grain-free and paleo-friendly (and many include fun goodies like fresh fruit and different nuts and spices), this is the first low-carb coffee cake recipe I have posted!

It is keto-friendly, sugar-free, and such a delight to share.

…Or not share, which is what almost happened in my case, as I ate half of the cake during/after photographing it.

What can I say…my love for cinnamon knows no bounds.

Let’s chat all about this cake.

Who here is ready to go full send into butter and sugar season??

I can only speak for myself when I say bring it on!

Having grown up with a mother who is a fabulous baker, I always eagerly await the holidays because I absolutely love baking treats to share with others. In fact, I get more joy out of giving away the treats than I do from actually consuming them. 😉

Every holiday season, I share a new shortbread recipe. I just can’t help it…there is just so much you can do with shortbread!

Low-Carb Shortbread Cookies made with almond flour and coconut oil - a healthier keto Christmas cookie recipe

Just take a gander at my Paleo Chocolate Shortbread Cookies, 3-Ingredient Paleo Shortbread, Chocolate-Dipped Cardamom Orange Paleo Shortbread Cookies, and Maple Pecan Gluten-Free Shortbread to whet your whistle.

WELL, this is the first  low-carb keto shortbread cookie recipe I have shared on this site. Boy oh boy, is it tasty!

It reminds me of traditional shortbread, giving you all the festive holiday feels. It tastes nice and buttery in spite of being dairy-free. It has that delectable crisp and a very similar texture to shortbread made with regular all-purpose flour.

If you love classic shortbread, you’ll enjoy these buttery cookies as is! If you’re a chocoholic like me, you can spruce them up even further. Dip the shortbread in melted sugar-free chocolate and sprinkle with chopped nuts for a real wild ride!

Almond Flour Coffee Cake (Paleo)

Almond Flour Coffee Cake that is perfectly moist and fluffy with amazing cinnamon pecan topping. This delicious healthy coffee cake recipe is paleo, grain-free, dairy-free, and refined sugar-free.

Well, this is long overdue!

If you’ve been following my site for a few years, you know I have about 17 million coffee cake recipes. All requiring different funky add-ins to make each very unique and special…but every single coffee cake recipe is made with coconut flour.

This is our first foray into almond flour coffee cake, and I really must say….I’m obsessed.

This paleo coffee cake turns out tasting plenty cinnamony and is perfectly sweet. In my mind, coffee cake shouldn’t be as sweet as a standard cake…subtly sweet but not in a dessert-like way.

It is nice and moist and has a buttery flavor to it in spite of the fact that it contains no butter. In my mind, it’s the perfect healthy treat for anyone to enjoy as breakfast or snack. PLUS, if you have family or guests around that have dietary restrictions, this is a marvelous recipe that fits multiple restrictions.

Vegan Cranberry Crumb Bars (Paleo)

Paleo Cranberry Crumb Bars made grain-free, dairy-free and refined sugar-free are a healthy and delicious dessert recipe that requires minimal ingredients! Use your leftover homemade cranberry sauce from Thanksgiving or prepare the easy cranberry filling provided in this recipe. Either way, these healthy gluten-free crumb bars are a breeze to make and a pleasure to share!

The holidays have been interesting this year for everyone. We had our Friendsgiving in October and Thanksgiving almost a week early, then decided to make the most epic chili EVER on actual Thanksgiving.

I’m naturally resistant to change and used to get my feathers all in a tussle when plans changed, but 2020 taught me I must go with the flow…or drown.

So flow it is! I find embracing new traditions to be the best way we can heal from the past, keep moving forward and forming new meaningful memories to keep ourselves content.

All this to say, I had leftover Maple Bourbon Cranberry Sauce from my Friendsgiving celebration, and rather than let it go to waste, I put it to the best possible use: Dessert!

My Paleo Blueberry Crumb Bars  and Vegan Strawberry Crumb Bars were such a hit in the past that my mind instantly crumb bar-ed the sauce.

You guys…these are the easiest, most delicious little dew drops of joy you will ever encounter. If you already have cranberry sauce on hand, they require basically zero effort.

If you don’t already have cranberry sauce on hand, no worries! I have included a recipe for cranberry filling, so you can still enjoy these treats. And they’re still ultra easy to make!

What makes this dessert recipe extremely easy is the fact that both the crust and the crumble topping are made with the same mixture. Mix once, use twice!

AND the mixture couldn’t be any simpler to make: it’s a combination of almond flour, melted coconut oil and pure maple syrup. BAM! Geniusness!

Almond Flour Dinner Rolls - paleo, dairy-free, low-carb roll recipe that is healthy and gluten-free

When I was a kid, a meal was not a meal without bread or rolls. In fact, when I was a kid, every meal was basically bread…or rolls.

Having eaten a whole food diet for over a decade now, it is very rare I crave bread at this point. But when I do, man oh man, IT IS ON.

These almond flour dinner rolls definitely get the job done. They have that comforting fluff, the irresistible crisp, and are even better with a slather of butter and honey.

Almond Flour Dinner Rolls - yeast-free, grain-free, dairy-free, easy to make!

Plus, they are CRAZY easy to make! No yeast, no waiting for dough to prove, just mix it all up, bake, and you’re on your way to roll heaven.

Paleo Pecan Pie Bars (Vegan)

Paleo Pecan Pie Bars that are vegan, grain-free, dairy-free, sweet, gooey, and buttery for the most amazing nutty treat. This caramel-covered dessert recipe is fun to make and perfect for sharing with friends and family during the holiday season.

Have you ever dreamt up a sinfully addictive dessert that is all-things gooey, chewy, soft yet crunchy, caramel-y yet crispy, creamy and nutty with an explosion of flavor and texture?

That is, in a nutshell, these Paleo Pecan Pie Bars.

…Or pecan goo bars as I like to call them.

The only thing that could possibly make them better is if they were dipped in dark chocolate.

Grain-Free Paleo Pecan Pie Bars - vegan, dairy-free, gluten-free, refined sugar-free, healthy dessert recipe

First things first: I mentioned this in my recent post for Keto Pecan Pie, but I find some people turn their nose up to pecan desserts because they assume they won’t like them (this was me the first 18 years of my life).

Before you decide you don’t need these bars in your life, let me line out all the reasons you do. Starting with an overly descriptive summary of what a pecan bar actually is.

If you’ve never tried pecan pie or pecan bars, here’s the basic gist: Delectably maple-y gooey pecans engulfed in homemade caramel nestled on top of a buttery shortbread crust with a perfect thin layer of crisp at the top as well as a nice crunch at the bottom.

It’s basically two layers of wild, wild rebellion.

Don’t cancel me.

Vegan Paleo Pecan Pie Bars - gooey caramel pecan bars on shortbread crust - an amazing healthier dessert recipe that is grain-free, dairy-free, gluten-free and delicious! No eggs or gluten!

Aside from being paleo, vegan, dairy-free, grain-free, and sweetened with less processed sugars, these pecan pie bars are a true delight to make.

They’re a great family project to make with kidlets as well as lovely edible gifts for friends and family. I highly encourage you to make them for dessert for Thanksgiving!

Let’s talk ingredients.

Dairy-Free Keto Pecan Pie (With a Paleo Option)

Dairy-Free Keto Pecan Pie is a sugar-free version of classic Pecan Pie. Made with grain-free almond flour pie crust and delicious sugar-free caramel filling with the most delectable crunch from the pecans, this healthier dessert recipe is a wonderful treat to share with friends and family.

Truth: I didn’t try pecan pie until I was in college because I was convinced I wouldn’t like it.

Boy oh boy, was I incorrect!

Pecan pie is one of my favorites, thought I don’t eat it often, because it contains ingredients with which I don’t mix well (lots of dairy and sugar).

Traditional pecan pie is made primarily of butter, cream, and sugar. And pecans. DELICIOUS!

It is packed with nutty flavor and texture while boasting a gooey caramel-like appeal on top of a buttery crust. If you haven’t tried it, I highly encourage it!

Low-Carb Pecan Pie made grain-free, dairy-free, keto, healthier dessert recipe

Imagine caramel and a maple tree had a baby that exploded in your mouth with sultry bits of shortbread and softened nuts. That’s pretty much the experience you get with pecan pie. It goos so well.

In order to take a dairy-free and sugar-free approach, I swap all dairy with coconut oil and coconut milk (don’t worry, the pie does not taste like coconut), and a sugar-free sweetener.

The end result is a pecan pie that tastes buttery, is nice and sweet, yet is grain-free, sugar-free and keto friendly.

For those of you who don’t use sugar-free sweeteners (I didn’t for a long time while I was experiencing gut issues, because they aggravated my IBS), I have included an paleo option, which uses coconut sugar.

Sugar-Free Pecan Pie (Keto, Low-Carb) - grain-free, sugar-free, dairy-free, healthier pecan pie recipe for a low-carb dessert. Recipe includes a paleo option
