Hook line and sinker!
Initty in in in!
For this edition of gingerbread in paradise, we’re going full-tilt low-carb using almond flour and coconut flour. This is an extra interesting approach to gingerbread since it doesn’t include molasses. Check it out.
Keto Shortbread Cookies made with three basic ingredients! This easy low-carb shortbread recipe is grain-free, sugar-free, dairy-free and vegan. A healthier cookie recipe to enjoy during the holidays!
Who here is ready to go full send into butter and sugar season??
I can only speak for myself when I say bring it on!
Having grown up with a mother who is a fabulous baker, I always eagerly await the holidays because I absolutely love baking treats to share with others. In fact, I get more joy out of giving away the treats than I do from actually consuming them. 😉
Every holiday season, I share a new shortbread recipe. I just can’t help it…there is just so much you can do with shortbread!
Just take a gander at my Paleo Chocolate Shortbread Cookies, 3-Ingredient Paleo Shortbread, Chocolate-Dipped Cardamom Orange Paleo Shortbread Cookies, and Maple Pecan Gluten-Free Shortbread to whet your whistle.
WELL, this is the first low-carb keto shortbread cookie recipe I have shared on this site. Boy oh boy, is it tasty!
It reminds me of traditional shortbread, giving you all the festive holiday feels. It tastes nice and buttery in spite of being dairy-free. It has that delectable crisp and a very similar texture to shortbread made with regular all-purpose flour.
If you love classic shortbread, you’ll enjoy these buttery cookies as is! If you’re a chocoholic like me, you can spruce them up even further. Dip the shortbread in melted sugar-free chocolate and sprinkle with chopped nuts for a real wild ride!
Let’s bake them up!
Almond Flour Coffee Cake that is perfectly moist and fluffy with amazing cinnamon pecan topping. This delicious healthy coffee cake recipe is paleo, grain-free, dairy-free, and refined sugar-free.
Well, this is long overdue!
If you’ve been following my site for a few years, you know I have about 17 million coffee cake recipes. All requiring different funky add-ins to make each very unique and special…but every single coffee cake recipe is made with coconut flour.
This is our first foray into almond flour coffee cake, and I really must say….I’m obsessed.
This paleo coffee cake turns out tasting plenty cinnamony and is perfectly sweet. In my mind, coffee cake shouldn’t be as sweet as a standard cake…subtly sweet but not in a dessert-like way.
It is nice and moist and has a buttery flavor to it in spite of the fact that it contains no butter. In my mind, it’s the perfect healthy treat for anyone to enjoy as breakfast or snack. PLUS, if you have family or guests around that have dietary restrictions, this is a marvelous recipe that fits multiple restrictions.
First things first, let’s talk ingredients:
Paleo Cranberry Crumb Bars made grain-free, dairy-free and refined sugar-free are a healthy and delicious dessert recipe that requires minimal ingredients!
Paleo Almond Flour Dinner Rolls are grain-free, dairy-free, fluffy, with lovely texture. Psst! Serve them up with a drizzle of honey for an excellent accompaniment to any meal!
When I was a kid, a meal was not a meal without bread or rolls. In fact, when I was a kid, every meal was basically bread…or rolls.
Having eaten a whole food diet for over a decade now, it is very rare I crave bread at this point. But when I do, man oh man, IT IS ON.
These almond flour dinner rolls definitely get the job done. They have that comforting fluff, the irresistible crisp, and are even better with a slather of butter and honey.
Plus, they are CRAZY easy to make! No yeast, no waiting for dough to prove, just mix it all up, bake, and you’re on your way to roll heaven.
Paleo Pecan Pie Bars that are vegan, grain-free, dairy-free, sweet, gooey, and buttery for the most amazing nutty treat. This caramel-covered dessert recipe is fun to make and perfect for sharing with friends and family during the holiday season.
Have you ever dreamt up a sinfully addictive dessert that is all-things gooey, chewy, soft yet crunchy, caramel-y yet crispy, creamy and nutty with an explosion of flavor and texture?
That is, in a nutshell, these Paleo Pecan Pie Bars.
…Or pecan goo bars as I like to call them.
The only thing that could possibly make them better is if they were dipped in dark chocolate.
First things first: I mentioned this in my recent post for Keto Pecan Pie, but I find some people turn their nose up to pecan desserts because they assume they won’t like them (this was me the first 18 years of my life).
Before you decide you don’t need these bars in your life, let me line out all the reasons you do. Starting with an overly descriptive summary of what a pecan bar actually is.
If you’ve never tried pecan pie or pecan bars, here’s the basic gist: Delectably maple-y gooey pecans engulfed in homemade caramel nestled on top of a buttery shortbread crust with a perfect thin layer of crisp at the top as well as a nice crunch at the bottom.
It’s basically two layers of wild, wild rebellion.
Don’t cancel me.
Aside from being paleo, vegan, dairy-free, grain-free, and sweetened with less processed sugars, these pecan pie bars are a true delight to make.
They’re a great family project to make with kidlets as well as lovely edible gifts for friends and family. I highly encourage you to make them for dessert for Thanksgiving!
Let’s talk ingredients.
Dairy-Free Keto Pecan Pie is a sugar-free version of classic Pecan Pie. Made with grain-free almond flour pie crust and delicious sugar-free caramel filling with the most delectable crunch from the pecans, this healthier dessert recipe is a wonderful treat to share with friends and family.
Truth: I didn’t try pecan pie until I was in college because I was convinced I wouldn’t like it.
Boy oh boy, was I incorrect!
Pecan pie is one of my favorites, thought I don’t eat it often, because it contains ingredients with which I don’t mix well (lots of dairy and sugar).
Traditional pecan pie is made primarily of butter, cream, and sugar. And pecans. DELICIOUS!
It is packed with nutty flavor and texture while boasting a gooey caramel-like appeal on top of a buttery crust. If you haven’t tried it, I highly encourage it!
Imagine caramel and a maple tree had a baby that exploded in your mouth with sultry bits of shortbread and softened nuts. That’s pretty much the experience you get with pecan pie. It goos so well.
In order to take a dairy-free and sugar-free approach, I swap all dairy with coconut oil and coconut milk (don’t worry, the pie does not taste like coconut), and a sugar-free sweetener.
The end result is a pecan pie that tastes buttery, is nice and sweet, yet is grain-free, sugar-free and keto friendly.
For those of you who don’t use sugar-free sweeteners (I didn’t for a long time while I was experiencing gut issues, because they aggravated my IBS), I have included an paleo option, which uses coconut sugar.
There are plenty of ways you can swap ingredients in this recipe to make it work for your diet. Just check out my Recipe Adaptations section to see all of the options!
Almond Flour Pie Crust for any pie! Grain-free, dairy-free, refined sugar-free, paleo and keto friendly. Tastes just like regular pie crust!
Paleo Pumpkin Swirl Brownies made two ways! This post includes a gluten-free option using a gluten-free all-purpose flour blend, and a grain-free option made with almond flour.

Like a down blanket for your taste buds. If you will.
These paleo pumpkin swirl brownies are an amazing amalgamation of two of your favorite flavors: chocolate and pumpkin. Nope, you don’t even have to choose between them!
Because I’m so obsessed with pumpkin brownies, I created two versions of this recipe, both of which are near and dear to my heart and turn out completely differently from one another.
So make them both, because: variety 😉
Details? Here they are:
- Gluten-Free and Grain-Free options
- Refined sugar-free
- Moist, fudgy, rich and decadent

Chocolate chips?? Put them everywhere!
All assembled, these grain-free vegan peanut butter brownies are:

Crunchy No-Bake Peanut Butter Cookies made with only 4 ingredients! This healthier no-bake cookie recipe is made with puffed rice for the most delectable crunch! Gluten-free, refined sugar-free, dairy-free, AND vegan, these treats are an amazing loveable treat by all!
Do you remember by 6-Ingredient No-Bake Cookies featuring oats, almond butter and cacao powder I posted a few weeks ago? Have you tried them yet??
Those cookies were such a hit that I wanted to revisit the no-bake cookie topic and take a different approach, using puffed rice for the ultimate crunch.
…and my complete adoration for crunchy puffed rice cereal had nothing to do with my decision to make these.
Okay, I fibbed. I’m obsessed.
Sometimes I eat puffed rice for dinner with blueberries, pumpkin seeds, a scoop of nut butter and coconut milk. Coconut milk, people! Like a straight-up teenager.
As I was saying…
Puffed rice cereal makes these no-bake peanut butter cookies nice and crunchy and addicting. You can consider them to be a healthier treat recipe, as they are refined sugar-free, gluten-free, and dairy-free – great for those with dietary restrictions and no dietary restrictions alike!
I have a feeling you’re going to go bonkers over these if you’ve ever been a fan of rice crispy treats, and/or if you’re a peanut butter lover.
Also, have I mentioned they only require a whopping FOUR ingredients to fashion up? What a dream.
