I had a reader request sheet pan recipes recently and I am so thrilled to help out in this department. One-pot or one-pan meals are my jam, because let’s face it: I love keeping meal time as quick and easy as possible. Of course, that includes the post-meal cleanup.

If you’re a regular here, you have probably surmised salmon is my favorite of all the animal proteins. I eat it multiple times per week every single week with some form of roasted or sauteed vegetables, but of course! You can take a look at my salmon archives to feast your eyes on all the salmon-ness!

Simplifying my own approach to salmon and roasted veggies as much as possible, I thought it would be nice to whip up a super straight-forward meal that requires few ingredients yet still has the appeal of a fancy date night meal.

As you know, I’m a daily drinker of the bulletproof coffee, but from time to time, I enjoy an afternoon homemade coffee treat such as a Pumpkin Spice Latte, or an Eggnog Latte. While I do enjoy a nice holiday-inspired treat, I’d choose a hot beverage over a Christmas cookie if you can believe it.

There’s something about sipping on something warm, warmly spiced, festive, and ever so slightly sweet that just brings all the holiday cheer to your heart and soul.

Sometimes that special something is straight up coffee and whisky during a day of snowboarding, and sometimes that special something is an eggnog latte.

After whipping up The BEST Vegan Eggnog a couple weeks back, I went on an Eggnog Latte kick (using decaf coffee, because girl’s gotta sleep, you know?).

Hey, you! How was your Thanksgiving?

My family kept things traditional and mellow, with a turkey, a couple vegetable side dishes, mashed sweet potatoes, and that Paleo Pumpkin Cheesecake I showed you last week. *Simple* goes a long way in keeping things light and fun in my family!

While the couple months surrounding Thanksgiving, Christmas and New Year can be disorienting for many of us, I’m doing what I can to stick to my regular eating and exercise regimen this year (last year was a doozy for me!!) even if that does sound like an epic snooze fest.

For me, that means not allowing myself to get carried away with sugary blissful treats (you know how I love my sugar…) and not allowing other people’s re-evaluation of their own habits seep through to mine. I’m still developing dessert recipes, just doing everything in my power to keep the consumption of them at a reasonable level.

And so!

Meals like this Instant Pot Sausage and Cabbage Soup continue to be my main squeeze. I love them so.
