I’m sharing a tutorial on how to make artichokes in the Instant Pot, and believe you me, this method is goof proof. No worrying about water levels or temperatures or the stubborn rock solid hardness of rogue artichokes.

Let’s do this!

How to Make Instant Pot Artichokes:

Use a sharp knife to cut the top inch off each artichoke.

Similarly, chop the stem off.

How to cook artichokes in the pressure cooker

Use kitchen scissors to trim the pointy leaves.

Pour 1 cup of water into the Instant Pot and insert the wire rack.

How to Make Instant Pot Artichokes

Place artichokes on the wire rack. Seal the lid and press the Pressure Cook button. Set the timer for 10 minutes for medium-sized artichokes or 15 minutes for large. Keep the steam vent sealed.

How to Make Instant Pot Artichokes

Once the pressure cooker has run its course, use the quick release to let out the steam. Open the lid and remove the artichokes.

Serve artichokes with your favorite dipping sauce. Hint: I used the Tahini sauce from my Easy Chicken Shawarma recipe! You can get creative with homemade sauces, dressings, and aioli!

Instant Pot Artichokes

How to make artichokes Instant Pot (or pressure cooker). This quick and easy method results in perfect artichokes every time!
Prep Time: 10 minutes
Cook Time: 15 minutes
Total Time: 25 minutes
3 to 4 people

Ingredients

  • 3 to 4 large artichokes

For Serving:

  • mayonnaise
  • parmesan cheese, grated
  • fresh parsley, chopped
  • lemon wedges

Instructions

  • Use a sharp knife to cut the top inch off each artichoke. Similarly, chop the stem off. Use kitchen scissors to trim the pointy leaves.
  • Pour 1 cup of water into your Instant Pot (or pressure cooker) and insert the wire rack. 
  • Place artichokes on the wire rack. Seal the lid and press the Pressure Cook button. Set the timer for 15 minutes for medium-sized artichokes or 25 minutes for large. Keep the steam vent sealed.
  • Once the pressure cooker has run its course, use the quick release to let out the steam. Open the lid and remove the artichokes.
  • Serve artichokes with your favorite dipping sauce.

Awesome post and great photos! We have been seeing artichokes in the grocery store a lot lately. They are so yummy and a meal all to their own. Thanks for the post.
