Creamy Carrot Soup (paleo, vegan)

This easy Creamy Carrot Soup with ginger and coconut milk requires only a handful of basic ingredients and not much time to prepare. Healthful, flavorful, vegan, and paleo, this is a something-for-everyone comfort food!

During the fall and winter when it gets dark early and the weather is chilly, I love curling up to bottomless bowls of soup.

Creamy vegetable soups are some of my favorites! Sweet Potato Soup always gets the limelight, but I enjoy creamy carrot soup even more!

Carrot soup is naturally sweet, a touch earthy, and pairs magnificently with Thai flavors like ginger, cumin and coconut milk. That’s the route I’m taking with this carrot ginger soup recipe!

The recipe contains no cream, butter or oil. Simply all squeaky clean ingredients that leave you feeling nourished and happy.  The texture is pillow-y smooth and the flavor is sweet and subtly curry-like with a little kick.

Let’s dive in to the details!

Almond Flour Coffee Cake (Paleo)

Almond Flour Coffee Cake that is perfectly moist and fluffy with amazing cinnamon pecan topping. This delicious healthy coffee cake recipe is paleo, grain-free, dairy-free, and refined sugar-free.

Well, this is long overdue!

If you’ve been following my site for a few years, you know I have about 17 million coffee cake recipes. All requiring different funky add-ins to make each very unique and special…but every single coffee cake recipe is made with coconut flour.

This is our first foray into almond flour coffee cake, and I really must say….I’m obsessed.

This paleo coffee cake turns out tasting plenty cinnamony and is perfectly sweet. In my mind, coffee cake shouldn’t be as sweet as a standard cake…subtly sweet but not in a dessert-like way.

It is nice and moist and has a buttery flavor to it in spite of the fact that it contains no butter. In my mind, it’s the perfect healthy treat for anyone to enjoy as breakfast or snack. PLUS, if you have family or guests around that have dietary restrictions, this is a marvelous recipe that fits multiple restrictions.

Keto Snickerdoodle Mug Cookie

Keto Snickerdoodle Mug Cookie is the easiest snickerdoodle you’ll ever make! Low-carb, grain-free, dairy-free, and sugar-free, this easy single-serve dessert recipe is made with 5 ingredients in less than 5 minutes!

The only thing better than a freshly-baked batch of snickerdoodle cookies is a freshly microwaved snickerdoodle mug cookie 😉

Joking aside, I do love my mug desserts, as they keep my intake of sweets under control. Rather than eating half that batch of snickerdoodles, I’m eating one…just one perfect one that happens to be sugar-free.

Simply stir up the ingredients for the cookie and nuke it in the ol’ microwave for an epic treat!

…And for those times you must bake a full batch, you can whip up my Keto Snickerdoodles recipe, or my Grain-Free Snickerdoodles for a paleo version.

Keto Snickerdoodle Mug Cookie - low-carb dessert recipe - a grain-free, dairy-free version of snickerdoodles...in a mug!

The best part about the snickerdoodle cookie is the very thing that makes a snickerdoodle a snickerdoodle: the cinnamon-sugar sprinkle on top.

All we do to mimic that sprinkle is stir up a tiny amount of sugar-free sweetener with an even tinier amount of ground cinnamon. This mixture gets sprinkled on top for an ooh la la experience that’ll keep you coming back for more.

A snickerdoodle a day keeps the…well…moving right along.
