Tuna Noodle Casserole

Tuna Noodle Casserole made with gluten-free pasta noodles, a rich and creamy sauce, and a crispy topping for an amazingly filling and nourishing meal.

Tuna Noodle Casserole was my second favorite meal growing up (the first being lasagna). It has always been one of those meals I can power through and just eat bottomless bowlfuls.

Perfectly tender carby noodles swaddled in a creamy well-seasoned sauce with plenty of chunks of tuna and a nice portion of cheese? What more could we want in a casserole??

Maybe bacon. You can totally add bacon!

Tuna Noodle Casserole - gluten-free, light on dairy, easy casserole recipe

This tuna noodle casserole recipe is a bit different from the classic.  I make it using gluten-free noodles, and I make the sauce with full-fat canned coconut milk instead of regular cow’s milk or cream.

The end result is still that incredibly comforting, satisfying casserole that can feed a crowd and make your belly beam with joy.

If you don’t do noodles of any kind, you can always visit my Tuna and Rice Casserole  – it’s a low-FODMAP recipe for those who have sensitive GI tracts, and it’s just as cozy!

Let’s dive right into the details!

Creamy Brussel Sprout Casserole (Low-Carb)

Creamy Brussel Sprout Casserole with bacon and crispy topping is an amazing side dish to share with friends and family. Even the biggest brussel sprout naysayers will love this cheesy casserole!

Whip up this keto brussel sprout casserole recipe for your holiday gatherings for a comforting yet healthful low-carb side dish.

It was only a matter of time before we casseroled some brussel sprouts, am I right? Can I get a high-five? Down low? To the side?

Don’t cancel me.

It has been brought to my attention many times over the years that some folks don’t like brussel sprouts. As is true with most foods, I truly believe the appreciation depends on the way the dish was prepared.

For me, an easy Sauteed Brussel Sprouts Recipe with Butter and Garlic is absolute perfection.

…but I’m not about to turn down some cheesy brussel sprouts, no way, no how!

That’s where this easy cheesy creamy casserole comes into play. It’s a proper swaddling of brussels in a lovely creamy sauce with crispy bacon crumble topping.

No lie. As it turns out, a good, fresh, health-conscious green bean casserole is actually ultra palate-pleasing! Now I feel as though I need to make up for lost time and put this beauty on repeat!

While this healthy green bean casserole is more involved than most of the recipes I post, the way I see it is we typically make a dish like this for a special occasion and special occasions call for special food.

Keto Green Bean Casserole made dairy-free and wheat-free for a healthier version. Amazing holiday side dish that is low-carb and delicious!

There are four main parts to preparing this recipe: caramelizing the onions for the topping, cooking the green beans, preparing the sauce, and finally, making the casserole itself.

Each step is super easy! If you look at the recipe as a series of steps, it won’t seem as daunting. Pro Tip: Read the whole recipe before you begin it so that you can figure out the best way of fitting it into your day.

Let’s discuss the details so you know what you’re getting into!

Cheesy Keto Cauliflower Casserole - healthy low-carb casserole recipe - delicious side dish for any occasion

A Note About Dairy:

I’ve found many folks who are sensitive to dairy like me can tolerate certain types of cheeses (or all cheese) while staying away from fresh dairy, like milk, cream, butter, etc. For this reason, I use full-fat canned coconut milk for the sauce in this creamy casserole.

If you tolerate dairy well, you can easily replace the coconut milk with half & half or heavy cream! If, on the flipside, you are entirely dairy-free, you can replace the grated cheese with your favorite vegan grated cheese.

The ingredients for this casserole are simple and straightforward. Let’s chat!

Broccoli Cheddar Chicken Casserole

So…there’s good news and bad news. Which do you want first?

The Bad News: If you’re like me and you’re accustomed to meals that require approximately 2 steps and 20 minutes of time, this casserole is not that.

The Good News: This Chicken Broccoli Rice Casserole is CRAZY tasty and only requires 7 basic ingredients, many or all of which you probably have on hand.

As a followup to the bad news, this casserole is not at all complicated to make…it simply requires several steps and pots and pans to get you there. But once you’re there, ooh la laa is this thing amazing?!

It’s perfectly creamy and cheesy without being overly so. It’s a great combination of carbs, fat and protein, PLUS it includes broccoli, so: health food.
