Tuna Noodle Casserole was my second favorite meal growing up (the first being lasagna). It has always been one of those meals I can power through and just eat bottomless bowlfuls. 

Perfectly tender carby noodles swaddled in a creamy well-seasoned sauce with plenty of chunks of tuna and a nice portion of cheese? What more could we want in a casserole??

Maybe bacon. You can totally add bacon!

This tuna noodle casserole recipe is a bit different from the classic.  I make it using gluten-free noodles, and I make the sauce with full-fat canned coconut milk instead of regular cow’s milk or cream. 

The end result is still that incredibly comforting, satisfying casserole that can feed a crowd and make your belly beam with joy.

While this healthy green bean casserole is more involved than most of the recipes I post, the way I see it is we typically make a dish like this for a special occasion and special occasions call for special food.

Let me tell you, this casserole is AMAZING! It is well-worth the time and effort, is much healthier than classic green bean casserole, and will most definitely wow your guests!

A Note About Dairy:

I’ve found many folks who are sensitive to dairy like me can tolerate certain types of cheeses (or all cheese) while staying away from fresh dairy, like milk, cream, butter, etc. For this reason, I use full-fat canned coconut milk for the sauce in this creamy casserole. 

If you tolerate dairy well, you can easily replace the coconut milk with half & half or heavy cream! If, on the flipside, you are entirely dairy-free, you can replace the grated cheese with your favorite vegan grated cheese.

Broccoli Cheddar Chicken Casserole

So…there’s good news and bad news. Which do you want first?

The Bad News: If you’re like me and you’re accustomed to meals that require approximately 2 steps and 20 minutes of time, this casserole is not that. 

The Good News: This Chicken Broccoli Rice Casserole is CRAZY tasty and only requires 7 basic ingredients, many or all of which you probably have on hand.

As a followup to the bad news, this casserole is not at all complicated to make…it simply requires several steps and pots and pans to get you there. But once you’re there, ooh la laa is this thing amazing?!

It’s perfectly creamy and cheesy without being overly so. It’s a great combination of carbs, fat and protein, PLUS it includes broccoli, so: health food.

Truthfully, I rarely make casseroles (mostly because they require more than .5 steps to make) but I can definitely attest that this one will be on constant rotation in my home. It is just that pleasurable!
