Air Fryer Chuck Roast that’s perfectly seasoned and tender with crispy potatoes. This simple meal requires very little effort and quenches the meat and potatoes craving with ease.

As an enthusiastic fan of my Oven-Baked Pot Roast recipe for cooking chuck roast, I would have never imagined I’d be making chuck roast in the air fryer until this little diddy came into my world.

Why make chuck roast in the air fryer? First and foremost, it is quick, straightforward, and gets you a pot roast-adjacent result, but without a lot of juice. You can even toss in veggies for a one-appliance meal sort of adventure.

Ingredient Notes:

Boneless Chuck Roast: Choose any size of chuck roast you fancy, provided it will fit inside your air fryer. Mine is fairly small, and a 1.5 pound chuck roast fit perfectly. Do note that the size of the roast dictates the cook time (more on that later).

Garlic Powder: My all-time favorite seasoning for beef other than salt and pepper, garlic powder does a lot of heavy lifting in generating a beautiful savory flavor profile. For this reason, I use very little else!

Onion powder works great here too. There is no need to get fancy with many ingredients when seasoning your roast.

Sea Salt and Black Pepper: Liberally season the meat with salt and pepper to your personal taste.

How to Air Fry Chuck Roast:

Remove the chuck roast from its packaging and transfer it to a large plate or a cutting board. Pat off any excess moisture with paper towels. Sprinkle both sides of the roast liberally with sea salt, black pepper, and garlic powder.

Allow the meat to sit at room temperature for one hour. This gives the seasonings time to penetrate the meat and it also helps the meat cook evenly.

If you’re adding vegetables, chop them into large chunks and toss with avocado oil, sea salt, and garlic powder in a large bowl until everything is well coated in oil and seasoning. 

Preheat the air fryer to 400 degrees Fahrenheit for 3 minutes and spray the basket with olive oil or avocado oil cooking spray.

Transfer the seasoned roast to the basket of the air fryer and air fry at 400 degrees F for 15 minutes. This helps sear the meat to give it a nice crust.

Check the internal temperature with a digital thermometer to get a gauge of where the meat is at.

Lower heat to 315-320 for 20-60 minutes, or until your chuck roast reaches an internal temperature of 200 to 210 degrees Fahrenheit.  Insert a meat thermometer into the thickest part of the meat to get an accurate read.

Note: If adding vegetables such as onion, chopped carrots, or potatoes, add them when the roast has 20-25 minutes remaining to ensure the vegetables soften up nicely.

Transfer the chuck roast to a serving dish, and allow the meat to rest for 10 minutes before slicing and serving.

Storage Instructions:

  • Store leftover roast in an airtight container in the refrigerator for up to 5 days. Use it the next day in an egg scramble or omelette. 
  • Reheating Instructions: Reheat leftovers in the air fryer, oven, or in a skillet. I don’t recommend reheating beef roasts in the microwave, as they tend to be very firm and rubbery.

Recipe Tip

While most of us are accustomed to cooking steaks and many cuts of beef to 125 to 135 degrees F, the ideal internal temperature for chuck roast is 200 to 210 degrees F, which is when the tough connective tissue softens for a shreddable result.  For this reason, there is less concern for overcooking the meat.

Frequently Asked Questions:

How long does it take to cook chuck roast in the air fryer?

The exact cooking time depends on the weight of the roast. Aim for a 15 minute sear at 400 degrees regardless of the size.

Then, plan for 8-10 minutes per pound, or until the roast reaches an internal temperature of 200 degrees F.

Around 165 degrees F, the tough cut of meat begins to soften as the connective tissue starts to break down. This results in a tender chuck roast, which is a game changer considering this is one of the tougher cuts of beef.

Can I marinate chuck roast before air frying?

Yes! Use your favorite meat marinade, or make my Tri Tip Marinade and allow the meat to marinate for several hours (up to 24 hours).

When you are ready to cook, allow the excess marinade to drip off of the meat before placing it in the air fryer basket.

Can I use a different dry rub for beef?
