Almond Flour Coffee Cake that is perfectly moist and fluffy with amazing cinnamon pecan topping. This delicious healthy coffee cake recipe is paleo, grain-free, dairy-free, and refined sugar-free.
Well, this is long overdue!
If you’ve been following my site for a few years, you know I have about 17 million coffee cake recipes. All requiring different funky add-ins to make each very unique and special…but every single coffee cake recipe is made with coconut flour.
This is our first foray into almond flour coffee cake, and I really must say….I’m obsessed.
This paleo coffee cake turns out tasting plenty cinnamony and is perfectly sweet. In my mind, coffee cake shouldn’t be as sweet as a standard cake…subtly sweet but not in a dessert-like way.
It is nice and moist and has a buttery flavor to it in spite of the fact that it contains no butter. In my mind, it’s the perfect healthy treat for anyone to enjoy as breakfast or snack. PLUS, if you have family or guests around that have dietary restrictions, this is a marvelous recipe that fits multiple restrictions.
First things first, let’s talk ingredients:
Keto Snickerdoodle Mug Cookie is the easiest snickerdoodle you’ll ever make! Low-carb, grain-free, dairy-free, and sugar-free, this easy single-serve dessert recipe is made with 5 ingredients in less than 5 minutes!
The only thing better than a freshly-baked batch of snickerdoodle cookies is a freshly microwaved snickerdoodle mug cookie 😉
Joking aside, I do love my mug desserts, as they keep my intake of sweets under control. Rather than eating half that batch of snickerdoodles, I’m eating one…just one perfect one that happens to be sugar-free.
Simply stir up the ingredients for the cookie and nuke it in the ol’ microwave for an epic treat!
The best part about the snickerdoodle cookie is the very thing that makes a snickerdoodle a snickerdoodle: the cinnamon-sugar sprinkle on top.
All we do to mimic that sprinkle is stir up a tiny amount of sugar-free sweetener with an even tinier amount of ground cinnamon. This mixture gets sprinkled on top for an ooh la la experience that’ll keep you coming back for more.
A snickerdoodle a day keeps the…well…moving right along.

Feeling like a creamy, dreamy yet healthful dish that will tickle your taste buds and is crazy easy to make??
This simple 6-Ingredient Creamy Tuscan Spaghetti Squash is here for you, AND it’s bringing with it sun-dried tomatoes and artichoke hearts.
You’ll never believe how easy this recipe is to make. The only time consuming part about it is roasting the spaghetti squash. The good news is you can multitask while it is roasting, as the squash requires zero attention once it’s in the oven!
After the squash is roasted, the remainder of the recipe comes together in a split second – ideal for those evenings you want something comforting and seemingly fancy but don’t feel like exerting yourself in the kitchen.

Gluten-free sourdough pancakes made with no additional flour! Using sourdough discard and a few basic ingredients, you can make the easiest pancakes that are low-carb and big on sourdough flavor. You won’t believe how moist, soft and flavorful these pancakes are!
If you belong to any of the following camps, this crazy simple recipe for sourdough pancakes is for you:
- You’re out of flour
- You don’t want to wait the 8 recommended hours for your pancake batter to ferment in the refrigerator because you want pancakes MEOW!
- “Fun” is your middle name.
- You’re a human on planet earth.
True story: I ran out of flour because my gluten-free sourdough starter ate it all.
But I wanted to make pancakes and there my sourdough starter was, all full and ready to be used
…so I put on my thinking cap and I whipped up a batch of sourdough pancakes using sourdough discard only and no additional flour. Cue the bells, whistles, and parade!
All you need is sourdough discard, an egg, butter/ghee/oil, baking powder and baking soda. THAT’S it!
The result? Pancakes that actually taste like sourdough, are nice and squishy, not at all fluffy, soft and chewy, but did I mention not fluffy?
Just thought I would set the proper expectation.
Actually, these pancakes remind me of 50’s diner-style flapjacks…you know the ones that are actually flat instead of fluffy? That’s these. But gluten-free. And tasting all sourdough like.
I smear them with almond butter and fold them up like a pancake burrito. Fun fact.
Let’s make them.
The best gluten-free chocolate cake recipe with chocolate buttercream and chocolate ganache. This death by chocolate cake is incredibly moist, rich, and decadent!
