Mix avocado oil (or olive oil) with dried herbs, garlic powder, and sea salt.

Transfer the chopped vegetables to a mixing bowl, pour in the herb mixture and mix everything well.

Spread the vegetables over two large baking sheets in a single layer and bake at 425 degrees F for 20 minutes.

Combine the fresh minced garlic with a little oil in a small bowl.

Toss the vegetables in the garlic mixture and roast for another 8-10 minutes or until they reach your desired level of doneness.
