This Thai Chicken Chopped Kale Salad recipe comes from my cookbook, Let Them Eat Kale! Spoiler alert: It will make you guzzle peanut sauce.

If you’re wondering where you’ve seen the face above, you have probably taken a gander at (slash read and cooked your way through the entirety of) my cookbook, Let Them Eat Kale!. Because this hot diggity damn is straight from the salad section of my book!
What’s that you say? You’ve read and made every single recipe from Let Them Eat Kale! five times? You’ve eaten this salad seven times? You could never not eat kale ever again? You ::insert words of affirmation here:: my kale-filled dollup of cookbook lovin’? You sure know how to make a girl blush.
When folks ask me which recipes I recommend from my cookbook, the Thai Chicken Chopped Kale Salad is always on the list. I’d hate to play favorites, but I would be hard-pressed to say this isn’t my favorite salad in the book. Because it 200% is (don’t tell the other salads). Maybe because of the Brussels sprouts, but probably because of the peanut sauce. Undoubtedly because of the peanut sauce.
This crunchy salad is a real palate pleaser. The thinly sliced kale and Brussels sprouts take the place of cabbage in this Thai chicken salad and make for great texture and a nutrient-rich meal. The fresh mango, grilled chicken, and a zesty ginger-lime dressing are responsible for flavor blasting the greens and make for a filling salad that can be enjoyed as an entree.
PLUS there’s the creamy peanut sauce situation. Gulp it. You can add just a smidge of the peanut sauce for additional spunk or you can allow your greens to swim in it…the choice is yours. But if you’re gonna get wet, you may as well swim..is how I look at all the things in life. Particularly in food. Particularly in peanut butter.
All things added together, this is a well-balanced, vitamin-packed meal with mmmmhmmmm poking around in every crevasse (pronounced cre-VAHS). You’ve never seen mmmhmmm poking around the cre-VAHSes of salad? Well that just means you need to make this.

This looks delicious! I love peanut sauce, and this dressing sounds amazing. When we get chicken satay from our Thai restaurant, I could eat the sauce with a spoon!

This salad sounds like a must-make. Love all the ingredients. The last salad I had with kale & Brussels sprouts was done Caesar style. Raw kale & Brussels sprouts is truly a winning combination.
Oh kale yeah! I love this salad. That peanut sauce looks to die for! Yeah, I don’t know about the chopsticks either. Maybe a large serving spoon would be more appropriate for this salad!!!
