My 4-Ingredient Mediterranean Stuffed Salmon and my Mushroom and Spinach Stuffed Chicken Breast have been so well-loved since posting them that I figured it would be wise to revisit the topic by combining forces.
As it turns out, stuffing chicken with feta cheese, artichoke hearts, kalamata olives, sun-dried tomatoes, and spinach is one of the best decisions I’ve made all year!
The result is amazingly tender chicken with briny, tangy flavorful goodies just bursting out of it.
Easy enough to make on any given weeknight, or lovely for making in bulk for meal prepping, this versatile dinner recipe has a fancy date night vibe in addition to being so simple and rustic.
Ingredients for Mediterranean Stuffed Chicken:
For the Chicken Breasts: Chicken breasts, avocado oil, paprika, garlic powder, sea salt.
If you’ve never stuffed chicken breasts before, no sweat. You simply slice a little pocket into them, drizzle them with avocado oil and sprinkle them with seasonings before scooping the stuffing inside.
It may take a second to get the hang of slicing the chicken breast open, but once you have it down, the technique is easy!
The Stuffing: Feta cheese, artichoke hearts, sun-dried tomatoes, onion, kalamata olives, and spinach.
Everything gets sautéed and cooked together on the stove top to create the stuffing for the chicken breasts. It comes together very quickly and yields such a wildly flavorful combination!
Feel free to improvise by adding roasted garlic, roasted bell peppers, capers, pepperoncinis or any other boldly flavorful ingredients you feel would work well for you.
How to Make Mediterranean Stuffed Chicken:
Preheat the oven to 375 degrees F.
Give the chicken breasts a quick rinse under cool water, then pat them dry with a paper towel.
Lay the breasts flat on a cutting board and use a sharp knife to carefully cut a slit (or “pocket”) into each breast.
Coat the outside of each breast with avocado oil and sprinkle with paprika, garlic powder, and sea salt. Place the breasts in a large casserole dish.
Heat 1 tablespoon of avocado oil in a large skillet over medium-high and add the onion. Sauté, stirring occasionally, until the onion begins to soften, about 5 minutes.
Stir in the artichoke hearts, sun-dried tomatoes and kalamata olives, followed by the baby spinach. Cover the skillet for a couple of minutes to allow the spinach to wilt.
Stir in the feta cheese and mix well until the mixture is well-combined.
Scoop the stuffing mixture into each chicken breast. Bake on the center rack of the preheated oven for 35 to 45 minutes, or until the chicken is completely cooked through and reaches an internal temperature of 165 degrees Fahrenheit.

Mediterranean Stuffed Chicken
This Mediterranean Stuffed Chicken is a rustic and fancy dinner recipe that is jam packed with flavor AND easy to make!

I made this last night for dinner and it was amazing! I’ve always loved chicken but never made stuffed breasts before but I’ll sure be making them from now on . I adore Mediterranean food so this seemed like a no brainer and something we’d like and it did not disappoint. Wonder flavor , juicy , tender and amazing. I did add garlic to the stuffing though .
