Before I discovered my banana intolerance, I drank smoothies every day. Since going banana-free, I go in and out of smoothie kicks depending on the state of my gut health. If I have an IBS flare up, I gravitate toward replacing a meal or two with a smoothie or bone broth, as liquid is much easier on your digestive tract than solid food.

This fig beet blueberry smoothie is one of my recent happy-gut concoctions. It incorporates ingredients that are not only easy on your digestive system, but are welcomed with open arms. I use a fig, a few hunks of beet, blueberries, pineapple, coconut milk yogurt (probiotics), almond milk, ground cinnamon, raw pumpkin seeds (a natural anti-parasitic!) and some collagen peptides (awesome for repairing damaged gut lining!).

What zucchini-infused foods have you been whipping up this summer? I’ve been eating quite my share! I’ve been roasting it and sauteeing it to add to every meal – my morning scramble or frittata, and my lunch and dinner bowls. And, as you can see, I’ve been baking up paleo chocolate chip zucchini muffins as well.

Zucchini bread was always one of my favorites as a kid. I have fond memories of the homemade zucchini bread my mom used to make, and loved eating a thick slice warmed up with a hefty dollop of butter.

So I took that comforting concept and formed it into a grain-free muffin version…plus added dark chocolate chips, because: YOLO. I even go the extra mile to sprinkle the muffins with sea salt, because to me, the salty-sweet combo is pure heaven on earth for the tastebuds.

Any buttermilk pancakes lovers in the house? I feel buttermilk is one of those underrated ingredients for my generation. My mom used it all the time while I was growing up, so I maintain the fond memory of buttermilk waffles and pancakes, and homemade muffins and pastry-like treats made with the cultured milk.

Buttermilk is traditionally used in baking to help keep goods made with wheat flour soft and tender, as it helps break down gluten. Since we’re not using wheat in this recipe for buttermilk paleo pancakes, the faux “buttermilk” functions more for flavor, richness, and moisture, as the pancakes are inherently soft.

To make non-dairy buttermilk, simply combine full-fat canned coconut milk with cider vinegar and allow it to sit a few minutes. The result is a thick and tangy buttermilk-like substance that can be incorporated into your baked goods just as you would actual buttermilk.
