Mediterranean-Style Scalloped Potatoes! Scalloped

Mediterranean-Style Scalloped Potatoes! Scalloped Potatoes is a timeless classic at my family’s Thanksgiving...we make it every year! When I was a kid, my holiday plates would consist of 98% scalloped potatoes. 😉 I decided to put a spin on it this time around using @mezzetta ‘s (#sponsored) Sun-Ripened Dried Tomatoes, Garlic-Stuffed Olives and Sweet Cherry Peppers. The end result is a gooey, cheesy, marvelously carby side dish with all sorts of pomp and circumstance! This Mediterranean-style approach requires almost no additional effort...simply chop up the goodies, layer them in, and you’re GOLD! INGREDIENTS:
4 lbs russet potatoes
2 (15-oz) cans full-fat coconut milk
½ yellow onion, finely chopped
5 cloves garlic, minced
2 Tbsp gluten-free AP flour
1 tsp sea salt
1 cup Mezzetta Sun-Ripened Dried Tomatoes
1 cup Mezzetta Garlic-Stuffed Olives, sliced
1/2 cup Mezzetta Sweet Cherry Peppers, chopped
3 cups Monterey jack cheese or gruyere, grated INSTRUCTIONS: Peel the potatoes and slice thinly. Place sliced potatoes in a large pot and cover with water. Soak while you’re preparing the rest of the recipe.
Add the coconut milk, chopped onion and garlic to a large skillet and bring to a full boil. Cook, stirring occasionally until the onion and garlic are very fragrant, about 5 minutes.
Whisk in the gluten-free all-purpose flour and sea salt and continue cooking until thick, about 3 minutes. Set aside until ready to use.
Chop the sun-dried tomatoes, olives, and peppers.
Preheat the oven to 375 degrees F.
Drain the sliced potatoes and add ⅓ of the slices to the bottom of a large (13” x 9”) casserole dish.
Add ⅓ of the sauce and spread over the potato slices. Sprinkle ⅓ of the sun-dried tomatoes, olives, and peppers, followed by ⅓ of the cheese.
Repeat for the remaining ingredients, creating a total of three layers.
Cover the casserole dish with foil and bake on the center rack of the oven for 45 to 50 minutes.
Remove the foil, and increase the oven heat to 450. Bake 10 to 15 minutes, until cheese is golden-brown. Enjoy! #mezzetta #mezzettamakesitbetta #mezzettamakesholidaysbetta https://www.theroastedroot.net

Want to know my secret to the easiest Thanksgiving meal that turns out incredibly delicious but requires almost zero work? Buy a fully-cooked smoked turkey, reheat it the day of the feast with a homemade glaze. BOOM! Incredibly satisfying and flavorful, but without all the hassle of brining and roasting ahead of time. Reheating a fully-cooked Turkey only takes 45 minutes to 1.5 hours (depending on the size), so you’re saving all sorts of oven space for those side dishes. I’m showing you this trick in my Instagram stories (head over to check it out) using ingredients that I picked up from @walmart ‘s free curbside pickup* #sponsored Here’s my recipe for my go-to glaze:
1/2 cup orange juice
1/4 cup avocado oil
3 Tbsp liquid aminos
1 Tbsp fresh ginger, peeled and grated

I’m whipping up my Paleo Sweet Potato Casserole

I’m whipping up my Paleo Sweet Potato Casserole today (follow along in my stories)! I personally try to avoid lines at all costs, so for this casserole, I ordered all my ingredients online at Walmart.com and used @walmart ‘s curbside delivery to make recipe prep easy. Holiday celebrations don’t need to be stressful or expensive. I grew up in a family that struggled to make ends meet, so for me, the holidays have always been about enjoying each other’s company and were never fancy, over-complicated, or perfect. My parents did what they could to make every holiday social, and our imperfect, informal gatherings are some of my most memorable experiences. My mom’s secret to stress-free holidays was she always knew what she would make in advance and kept it as simple as possible. Sweet Potato Casserole was my favorite as a kid. I insisted a few years ago that we clean up some of our family favorites, which is what you’re seeing here today! This grain-free, refined sugar-free version of Sweet Potato Casserole is magically delicious (it tastes like dessert), but uses cleaner ingredients for a health-conscious approach. FILLING:
3 large sweet potatoes
3 large eggs
1/2 cup full-fat coconut milk
1/4 cup pure maple syrup
2 tsp vanilla extract
1 tsp ground cinnamon
1 tsp sea salt
TOPPING:
1 1/3 cups almond flour
1 cup raw pecans, chopped
2 Tbsp tapioca flour
3 Tbsp coconut oil
3 Tbsp pure maple syrup
1 tsp ground cinnamon
1/2 tsp sea salt INSTRUCTIONS:
Chop sweet potatoes into large chunks and boil 20-30 minutes, until tender. Transfer to a blender with the rest of the ingredients for the filling and blend until smooth. Transfer to a small casserole dish
Preheat oven to 375 degrees F.
Combine ingredients for the topping in a mixing bowl. Spread evenly over the blended sweet potatoes. Bake 20-30 minutes, until topping is golden-brown.
