Keto Pots de Crème - a 3-ingredient dairy-free pot de crème recipe that is sugar-free and keto friendly

What are Pots de Crème?

Pots de Crème is a French custard translating literally to “pot of custard” or “pot of cream.” “Pots” in this application refers to the small ramekins or bowls typically used to serve the dessert. Look at it like pudding on steroids…you get that smooth creamy texture but it’s denser, almost like mousse.

To bring some amazing health benefits to the table, I add Great Lakes Collagen Hydrolysate to the recipe. It is unflavored and comes from grass-fed pasture-raised cows. It works amazingly in many types of recipes, like energy bars or balls, ice cream, smoothies, pudding, cookies, brownies, and more!

Ingredients for Pots de Crème:

Coconut Milk: Coconut milk makes up the majority of this recipe, and provides the creaminess. It is also naturally sweet without adding carbs or sugar, so it adds to the flavor. This also enables us to make the dessert dairy-free. 

Coconut milk is less sensitive to heat than dairy, which makes the recipe even easier to make than the traditional dairy version, in which you need to be careful with how much heat is applied. I don’t find these to have an overly coconutty taste, so even if you don’t like the flavor of coconut, I trust you’ll enjoy this dessert as the chocolate is what shines through.

If you tolerate dairy well, feel free to replace the coconut milk with half & half or heavy cream. You’ll need 1 2/3 cups. Just be sure to heat it slowly and carefully to avoid boiling the dairy.

Sugar-Free Chocolate Chips: The chocolate portion AND sweet portion of the recipe! In order to get both the chocolate flavor and the sweetness, we simply use a bag of sugar-free chocolate chips. This little trick makes preparing the pots de crème SO quick and easy!! If you don’t follow a low-carb or sugar-free diet, feel free to use regular chocolate chips or dark chocolate chips.

Collagen Hydrolysate: The all-star ingredient! With this simple addition, you’re gaining all the benefits of collagen peptides.  If you have Great Lakes Beef Gelatin on hand, you can use that as a 1:1 substitute for even thicker pots!

Optional Add-Ins:

  • 1 tablespoon of cocoa powder or raw cacao powder
  • 1 tablespoon sugar-free confectioners sugar
  • 1 teaspoon instant coffee granules

These three add-ins will make the Pots de Crème even sweeter and richer in chocolate flavor. Perfect for those who love dark chocolate and have a sweet tooth! Without the add-ins, the pots are still very rich and chocolatey but with a mild sweetness.

You can always start with the three base ingredients and add cocoa powder and/or confectioners sweetener to your liking!

Dairy-Free Sugar-Free Pots de Crème recipe

How to make Keto Pots de Crème:

Add all of the ingredients for the Keto Pots de Crème to a saucepan and heat over medium-low. Whisking constantly, heat the mixture just until the chocolate chips are melted and everything is well-combined.

Remove the mixture from the heat and transfer it to 4 to 6 bowls or ramekins.

Pour chocolate into bowls

Chill in the refrigerator until completely set up, about 2 hours.

Serve Keto Pots de Crème with whipped cream, fresh berries, and/or chocolate shavings.

Make it Paleo:

If you don’t consume sugar-free sweeteners, make these pots de crème paleo-friendly by chopping paleo chocolate bars (or dark chocolate bars of choice) instead of using chocolate chips. 

Remember, you will need 9 ounces of chocolate, which equates to 4 or more bars of chocolate, depending on the size.

Agar-agar it is ok to substitute the Collagen?

Hi Monica,

I've actually never used agar agar, but I just googled whether or not it can be used as a replacement for collagen, and based on what I found, I wouldn't do it. According to what I read, collagen (and gelatin) yield a thick, creamy consistency in recipes, whereas agar agar yields a firmer consistency/texture. I'm worried if you use it, the pots de creme would be too firm, almost like thick Jello? You can leave the collagen out altogether and still get an amazing texture. :) xoxo

If you do not have collagen hydrolysate, what substitute can you use instead?

Hi Yan!

You can omit it altogether or replace it with beef gelatin. It isn't an essential part of the recipe, so if you don't have collagen or gelatin, just use the coconut milk and sugar-free chocolate chips and you're all set :D xoxo

We used to drink warm Jello as teenagers, because we heard that the gelatin was good for your nails and skin. This desert with the collagen is a much healthier habit!
