When it’s too hot to think… when you need a break from less-than-stellar food (and/or alcohol) decisions… when you’re in the mood for something cold, crunchy, and green…THIS!

There’s something about a simple, seasonal, goody-packed salad that really sings to my heartstrings.

While I’m all about those filling, comforting meals, sometimes there’s nothing more satisfying than a light and cleansing lunch or dinner… which is where this vibrant beauty comes into play.

Kale and Blueberry Salad with Vegan Buttermilk Dressing - the perfect healthy option for bringing to picnics and barbecues!

I was telling you about this salad yesterday in my Vegan Buttermilk Salad Dressing post.

I really can’t take credit for this particular recipe, as it comes straight out of Southern Living’s Kale & Blueberry Slaw with Buttermilk Dressing recipe.

They call it a slaw…I call it a salad. We cool with that? We cool.

My favorite part about this recipe, other than the fact that it’s jam packed with nutritious crunchy, poppy, juicy goodies, is it saves super well!

You can make it ahead of time and enjoy it at a picnic/BBQ, or make it in bulk for work lunches.

Simply put everything in a huge bowl and toss in your desired amount of Vegan Buttermilk Salad Dressing. I didn’t use all of the dressing for this recipe, so you’ll likely end up with some leftover, which you can put toward other salad endeavors.

Kale and Blueberry Salad with Vegan Buttermilk Dressing

An amazing side dish or condiment for all your barbecues and picnics!

Ingredients

  • 1 large head currly kale leaves chopped
  • 1/2 small head cabbage thinly sliced
  • 2 large carrots peeled and sliced with a julienne peeler
  • 6 radishes thinly sliced
  • 1 cup blueberries
  • 1 cup raspberries
  • Vegan Buttermilk Salad Dressing

Instructions

  • Add the ingredients for the kale salad to a large serving bowl. Drizzle desired amount of vegan buttermilk salad dressing over the salad and toss well until everything is coated. Sprinkle sea salt to taste and serve alongside your favorite entree!
