This is one of those pre-fall meals to get you in the mood for what’s ahead. It incorporates fall and winter produce (sweet potatoes and brussel sprouts) to get you all fired up for cinnamon and nutmeg. 

Let’s face it, meals like this are our gateway to pumpkin season.

Unpretentious, uncomplicated, straightforward and undoubtedly nourishing is the name of the game here. 

If you love beef, sweet potatoes, or brussels sprouts, you will most assuredly be attracted to this meal. It’s a flavor fest, boasts health benefits, and is equal parts filling yet light. 

Enjoy it as is, or pair it with rice or a side salad for a more substantial meal.

Ingredients for Ground Beef and Sweet Potato Skillet

Well, you pretty much already nailed half the ingredients just by reading the title. Ground beef, sweet potato, brussels sprouts, red onion, garlic powder, oregano, and sea salt. That’s it!

I typically use either 80/20 or 85/15 grass-fed ground beef because it is SO flavorful! I recommend using a fattier grass-fed ground beef for the most flavorful, best results.

This simple combination gives you plenty of protein, fiber, complex carbohydrate, vitamins and minerals, and it’s nice and satisfying.

What I love about this recipe, aside from its tastiness and health benefits, is I throw every last ingredient into the skillet at the same time, and cook. 

So essentially, it takes zero brain power to make this recipe!

How to Make Ground Beef and Sweet Potato Skillet

Add all of the ingredients to a large skillet and heat to medium-high. Place the ground beef in the center of the skillet to allow it to brown for 2 minutes before flipping it to the other side and browning another 2 minutes.

Chop up the beef using a spatula, then stir it into the vegetables.

Stir everything well.

Turn the heat down to medium, cover the skillet and cook for 10 to 15 minutes, stirring occasionally, or until the vegetables have reached your preferred level of done-ness.

Taste for flavor and add sea salt to taste.

Serving Suggestions

Your serving options for this meal are endless! You can eat it as is (this is the sort of meal I eat for lunch), serve it up with steamed brown or white rice (I do this for dinner, which is when I eat the majority of my carbs), cauliflower rice, and/or more sautéed or roasted veggies.

If you do dairy, feel free to grate some parmesan, cheddar, or mozzarella cheese over everything while it’s still steamy hot. Gouda cheese would be great too!

Store leftovers in an airtight container in the refrigerator for up to 5 days.

Ingredients 

  • 1 Tbsp avocado oil
  • 1 small red onion
  • 1 lb ground beef
  • 8 ounces brussel sprouts
  • 1 small sweet potato
  • 1 tsp garlic powder
  • 1 tsp oregano
  • 1 tsp sea salt, to taste

    I loved this recipe! Quick and easy. My husband didn’t care for the beef/sweet potato combo though. Next time I think I’ll try red potatoes.
