I’m so excited to share this recipe for Instant Pot Pot Roast with you, not only because shredded beef is one of my favorite foods ever, but also because it’s comin’ atcha from Natalie Perry’s new cookbook, The Big Book of Paleo Pressure Cooking.

You may remember Natalie’s first cookbook, The Big Book of Paleo Slow Cooking from my Crock Pot Citrus Pork Chili with Mango post last year. She’s seriously an absolute rock star at recipe development in general and I’m amazed by her ability to generate such easy yet creative and delicious one-pot meals.

The way I see it, The Big Book of Paleo Pressure Cooking is perfect for the pressure cooking newbie to the pressure cooking maven. I’m still fairly new to my Instant Pot, and have found Natalies recipes to be so easy to follow. AND THEY’RE ALL SO GOOD! <- sorry to yell at your face.

Hey, you! How was your Thanksgiving?

My family kept things traditional and mellow, with a turkey, a couple vegetable side dishes, mashed sweet potatoes, and that Paleo Pumpkin Cheesecake I showed you last week. *Simple* goes a long way in keeping things light and fun in my family!

While the couple months surrounding Thanksgiving, Christmas and New Year can be disorienting for many of us, I’m doing what I can to stick to my regular eating and exercise regimen this year (last year was a doozy for me!!) even if that does sound like an epic snooze fest.

For me, that means not allowing myself to get carried away with sugary blissful treats (you know how I love my sugar…) and not allowing other people’s re-evaluation of their own habits seep through to mine. I’m still developing dessert recipes, just doing everything in my power to keep the consumption of them at a reasonable level.

And so!

Meals like this Instant Pot Sausage and Cabbage Soup continue to be my main squeeze. I love them so.

How do you feel about warm salads? I’ve gotta say, I absolutely love them!

If you’re a salad fiend, you may have noticed raw vegetables can be a bit tough on your digestive system. All it takes is a quick steam or saute to soften up the fibers so that your GI tract processes them easier so that they don’t cause GI upset and the nutrients are better absorbed.

I find lightly sauteed hearty greens like kale and brussel sprouts make for a filling salad that is easy on the digestive system and so cozy and inviting during the fall and winter months. With fall rapidly approaching, I’ll be whipping up warm salads regularly for lunches and dinners.

This salad is loaded with goodies! Shredded brussels sprouts, kale, quinoa, California avocado, sliced pears, and toasted walnuts make up this nutritious texturally-pleasing dish. The whole thing is tied together with a simple bacon-cider vinaigrette for a straightforward yet comforting and nourishing meal.

Essentially, it checks all the boxes!
