Oven roasting tri tip is an easy way of getting the perfect doneness in a relatively short period of time with minimal effort. This is my preferred method for cooking tri tip in the heart of winter when outdoor cooking feels like a no-go.

Simple enough to prepare ahead of time, this easy recipe features an incredible marinade, which gives the beef so much flavor for the tastiest result. Just remember to spot check the meat with a thermometer near the end of baking so that you end up with your preferred final temperature.

Let’s discuss the simple list of ingredients. Everything can be found at your local grocery stores.

Ingredients for Oven Baked Tri Tip:

Tri-Tip Roast: Also known as triangle roast, tri tip is a triangular cut of meat from the bottom sirloin of the cow. It is also a fairly tender leaner cut of meat, ideal for those whose personal preference is less fatty beef.

Soy Sauce (or Coconut Aminos): Providing salt content to produce flavorful tender meat, soy sauce brings a good deal of sodium and umami flavor to the meat.

Rice Vinegar or Fresh Lime Juice: Provides tangy flavor to make your taste buds swoon.

Avocado Oil or Olive Oil: Every great marinade contains some fat to help bring luscious flavor to the meal.

Pure Maple Syrup: A hint of sweetness balances out the savory flavors.

Stone Ground Mustard: Mustard is an amazing ingredient in marinades and dressings, as it adds a distinct flavor that is difficult to get anywhere else. You can’t taste it in this marinade, as it is here for a subtle undertone.

Seasonings: Garlic powder, paprika, ground ginger, red pepper flakes, and black pepper are the seasonings to add a little smoky flavor with a hint of spice.

How to Oven Bake Tri Tip:

  1. Blend the marinade ingredients in a blender until well combined. Transfer the raw tri tip to a large zip lock bag or container and pour the marinade in. Seal the bag and move the meat around until it appears like the whole thing is coated in marinade. Refrigerate for at least 2 hours (up to 36 hours).
  2. Preheat the oven to 325 degrees F. Place roast in a large casserole dish or roasting pan, allowing the marinade to drip off first. Allow it to sit at room temperature while the oven is preheating.
  3. Roast the tri tip on the center rack of the preheated oven for 25 minutes. Change your oven to the high broil setting and move the tri tip to the second to the top shelf of your oven. Broil 10 minutes, or until tri tip is golden-brown and crispy, and has reached desired doneness. (Note: this will produce a medium-rare tri tip. For rare, roast for 20 minutes and broil for 8).
  4. Insert an instant-read thermometer into the thickest part of the meat to check its internal temperature. See temperature guide in the notes below for final cooking temperatures.
  5. Transfer the meat to a cutting board and let tri tip rest for 15 minutes. This will allow the juices to evenly distribute throughout the meat and will help the meat tenderize.
  6. Slice roast tri tip into thin slices against the grain of the meat, and serve with your favorite side dishes.

Store leftover tri tip in an airtight container in the refrigerator for up to 5 days.

Final Cooking Temperatures for Tri Tip:

  • Rare: 115-120 degrees F
  • Medium Rare: 125-130 degrees F
  • Medium: 135-140 degrees F
  • Medium Well: 145-150 degrees F
  • Well Done: 150-155 degrees F

How Long To Bake Tri Tip in the Oven:

At 325 degrees Fahrenheit, aim for 12 minutes per pound and finish with broiling.

When baking at 425 degrees F. bake for 8-10 minutes per pound.

If you choose to sear the tri tip roast in a cast iron skillet before baking, do so for 3-4 minutes per side and reduce the bake time if need be.

The exact cooking time depends on the size and weight of the roast, as well as its temperature going into the oven. For this reason, using a meat thermometer is your best bet for achieving perfectly cooked tri tip.

Tips for the Best Oven-Roasted Tri-Tip

  1. Use a meat thermometer to spot check the temperature. This way you end up with perfectly cooked tri tip according to your preferred doneness.
  2. Try to avoid opening the oven too frequently to check on the tri tip roast. This ensures the oven stays at an adequate temperature so that the roast bakes evenly.
  3. Skip the marinade and simply sprinkle the beef tri tip with sea salt, black pepper and garlic powder (or your preferred dry rub) if you don’t have time to marinate the meat.
  4. Check the temperature of the meat prior to broiling it. If the internal temperature is still lower than 100 degrees, continue baking at 325 until it reaches at least 100 to 110 degrees.

And that’s it! My favorite way of preparing a large beef roast when the grill is out of commission. I hope you enjoy this cooking method as much as I do!

Questions and Reviews

  1. I made this without the paprika or red pepper flakes to make it AIP compliant. It was delicious! My family and friends all raved! This recipe is definitely a keeper!

    1. I’m so thrilled to hear it, Mimi! A perfectly cooked tri tip is so tough to beat! Happy you were able to make it work! xo

  2. Followed recipe and cook/broil time not nearly enough. Maybe at a higher temp but cooked at 325 for 25 min and broiled hi for close to 15 min and internal temp only got to 110. Maybe it was meat cut, but recommend cooking longer at prescribed temps

  3. Ahh these plates are so gorgeous!! I want them all. You did a beautiful job styling them. Way better than Seth Rogan. ๐Ÿ˜‰

p.s. Pineapple Express is the best movie EVER!!

  4. The writing is wonderful! I know exactly what you are saying and it was very entertaining! The table is picture perfect!
I am an obstinate “0” at entertaining. As an old dog, I will never learn that trick. But, I am looking forward to making the tri-tip recipe and the marriage proposal (my main squeeze be warned).
