After making my Italian Pasta Salad on repeat last year, I figured I needed a new pasta salad obsession for this summer.

And do I daresay, this may just be the best pasta salad recipe I’ve made?

This Greek Pasta Salad recipe is just so addicting with all of its fresh Mediterranean flair and briny big bold flavors between the vibrant sun-dried tomatoes, creamy feta cheese, tangy olives, crunchy pepperoncinis and the perfect homemade dressing.

The perfect side dish for any occasion, this easy pasta salad recipe comes together so quickly, making it ideal for weeknight dinners or special events.

Plus, it saves well and tastes even better after it has sat for a day or two, which is brilliant for meal prepping.

AND if you’re feeling like a hot pasta for dinner, you can absolutely eat it hot!

Let’s discuss the fresh and simple ingredients needed to make Greek Pasta Salad.

Ingredients for Greek Pasta Salad:

For the Pasta Salad: pasta noodles, sun-dried tomatoes, pepperoncinis, kalamata olives, red onion and feta cheese make up my favorite mix ins for Greek pasta salad.

You can also go with cherry tomatoes, fresh mozzarella cheese, black olives, spinach, red peppers, green bell pepper, fresh basil, artichoke hearts, kidney beans, fresh herbs, and crisp cucumbers depending on what you’re feeling.

I use gluten-free pasta (Jovial brown rice fusilli noodles is my go to) but any type of pasta noodle will work. Penne pasta and bowtie pasta noodles are lots of fun as well.

Omit the pepperoncinis if you prefer your food very mild as they do have a little kick to them.

Greek Salad Dressing Ingredients: olive oil (or avocado oil), cider vinegar (or fresh lemon juice or red wine vinegar), Italian seasoning, garlic powder, onion powder, and sea salt.

This combination of ingredients in the homemade Greek dressing yields a herby tangy dressing that is just packed with fresh Mediterranean flavor.

How to Make Simple Greek Pasta Salad:

Cook the noodles according to the package directions in a large pot of salted water. I always cook them 1 to 2 minutes less than the package indicates for al dente pasta noodles. Strain the noodles into a colander then immediately rinse well with cold water.

While the noodles are cooking, stir together the ingredients for the Greek dressing and set aside until ready to use.

Add the sun-dried tomatoes, pepperoncinis, kalamata olives, red onion and feta cheese to a large mixing bowl. Transfer the cooled cooked pasta noodles to the mixing bowl, then pour in the Greek salad dressing. Give everything a good toss, until everything is well-mixed.

Taste the pasta salad for flavor and add more sea salt and/or black pepper to taste.

Serve the Greek Pasta Salad as a crowd-pleasing side dish with your main entree, and enjoy!

Store any leftover pasta salad in an airtight container in the refrigerator for up to 5 days.

Pasta salad always tastes better the next day and the following days after making it. For this reason, if you have the time or forethought, try to prepare it one day before serving.
