- almond flour - avocado oil - pure maple syrup - eggs - apple - carrot - cinnamon, nutmeg, ginger

Mix together the eggs, avocado oil and pure maple syrup in a mixing bowl (wet ingredients).

Add in the almond flour, ground cinnamon, nutmeg, ginger, baking soda and sea salt (dry ingredients) and mix well.

Mix in the grated apple and carrot.

Transfer batter to a muffin tray lined with muffin papers. Bake for 20-25 minutes at 350, or until the muffins test clean.

Allow muffins to cool to room temperature before peeling off the muffin paper to eat.
