INGREDIENTS

- sweet potato - almond butter or nut butter of choice - pure maple syrup - vanilla extract - ground cinnamon - chocolate chips (optional)

Cook a medium-sized sweet potato according to your preference (I boil for 20-25 minutes on the stove top) then mash the sweet potato.

Mix the wet ingredients in a mixing bowl until well-combined, then add in the dry ingredients.

If adding, stir in the chocolate chips.

Transfer the muffin batter to a muffin tin and bake at 350 for 20-30 minutes.

Allow the muffins to cool completely before peeling the muffin wrappers off to eat!
