Did I ever tell you the story about my obsession with shredded meat? It’s a short one. I’m obsessed. 

Chicken, beef, pork…if it’s tender, saucy and pulled, I am in.

I’ve posted many recipes for pulled pork in the past…some with BBQ sauce, some in the crock pot, some in the Instant Pot, a couple carnitas-style recipes…no matter how you shred it, pulled pork is always an epic crowd-pleaser.

For this rendition, we’re making pulled pork in the Instant Pot with apples and apple cider. If you’ve never tried the combination of pork and apples, I assure it, it is magnificent…there’s a reason why it’s a thing.

Apple Fruit Leather

Fruit leather or fruit roll-ups were a staple in my school lunches, and a regular afterschool, pre-soccer snack growing up. I learned how to make it myself a few years ago and thought I would share the process. It’s easy! 

Homemade fruit leather is time-consuming, but it doesn’t require much attention so you can easily multi-task and/or perform the whole operation in steps over the course of a day (or multiple days).

One of the best parts about apple fruit leather is it requires almost zero added sugar because apples are naturally sweet on their own. I keep it refined sugar-free using coconut sugar, but you can swap it for cane sugar if that’s what you keep on hand.

Instant Pot Apple Butter (Paleo)

Instant Pot Apple Butter Recipe made refined sugar-free using coconut sugar and pure maple syrup. This warmly-spiced spread makes the perfect gift for friends and family.

Apple butter is basically mandatory during the fall and winter months. There’s something about the homemade spread using freshly harvested apples that warms the heart and soul!

While I love a traditional apple butter, it is just as easy to make apple butter refined sugar-free as it is to make it with cane sugar. I like using organic coconut sugar and pure maple syrup (or molasses!) for sweetening apple butter. This makes it ever so slightly lower on the glycemic index, and most people tend to process more natural sweeteners better than processed sweeteners.

So what do we need in order to make apple butter? Contrary to the title, apple butter contains no actual butter, making it suitable for dairy-free or vegan eaters.

All we need is apples, coconut sugar, pure maple syrup (or molasses), cinnamon, nutmeg, cloves, a squirt of lemon juice, and pure vanilla extract. Badda bing, badda boom! Apple butter magic!
