Ingredients for Ground Beef Taco Bowl:
Ground Beef Taco Meat: Avocado oil, lean ground beef, yellow onion, fresh garlic, sea salt, and chili powder. Taco seasoning also works here!
Roasted Sweet Potatoes: A large sweet potato, avocado oil, and sea salt.
For the Taco Bowls: Cooked brown rice or white rice, spring greens (or leafy greens of choice), cherry tomatoes, and black beans.ย
Creamy Avocado Dressing Ingredients: Avocado oil, fresh lime juice, fresh parsley or fresh cilantro, garlic, pure maple syrup, and sea salt.
Recipe Customizations:
- Feel free to add your favorite toppings here! Consider adding shredded cheese, sour cream, Greek yogurt, cottage cheese, black olives, tortilla chips, hot sauce, homemade salsa, and more.
- Swap out the avocado dressing for your favorite homemade guacamole, Chipotle Aioli, or Cilantro Lime Dressing.ย

How to Make a Ground Beef Taco Bowl:
Roast the Sweet Potato:
Preheat the oven to 400 degrees Fahrenheit. Chop the sweet potato into 2-inch chunks and spread them over a large baking sheet in a single layer.
Drizzle with avocado oil and sprinkle with sea salt. Toss the sweet potatoes in oil and seasonings using your hands until the chunks are coated.
Bake on the center rack of the preheated oven for 20-30 minutes, or until the sweet potatoes are golden brown and reach your desired level of doneness.
Prepare the Ground Beef:
Heat the avocado oil in a large skillet over medium-high heat. Add the chopped onion and sautรฉ, stirring occasionally, until the onion begins to soften.
Add in the fresh garlic and ground beef. Use a rubber spatula or wooden spoon to break the ground beef into small pieces.
Stir in the chili powder (or homemade taco seasoning). Continue cooking until ground beef is cooked through.
Assemble the Bowls:
Blend the ingredients for the avocado dressing in a small blender until creamy.
Load up bowls with cooked brown rice (or white rice), chopped greens, black beans, cherry tomatoes, and taco meat.
Drizzle the bowls with the creamy avocado dressing and serve! Serve taco rice bowls with lime wedges and any of your favorite taco toppings like pico de gallo, cheddar cheese, etc.
Store leftover taco meat in an airtight container for up to 5 days. If you have leftovers of other ingredients, store them in separate containers.

Ground Beef Taco Meat:
- 1 Tbsp avocado oil
- ยฝ cup yellow onion finely chopped
- 2 cloves garlic
- 1 pound lean ground beef
- 2 Tbsp chili powder

- 1 large sweet potato chopped into 2-inch cubes
- 1 Tbsp avocado oil
- Sea salt to taste
For the Bowls:
- 4 cups cooked brown rice
- 5 ounces spring greens chopped
- 1 cup cherry tomatoes halved
- 1 (15-oz) can black beans, drained and rinsed
- 1 batch creamy avocado dressing
Instructions
Roast the Sweet Potato:
- Preheat the oven to 400 degrees Fahrenheit. Chop the sweet potato into bite-sized cubes and transfer to a baking sheet. Drizzle with avocado oil and sprinkle with sea salt. Use your hands to toss the sweet potatoes in oil and salt until coated.
- Bake on the center rack of the preheated oven for 20-30 minutes, or until the sweet potatoes are golden brown and reach your desired level of doneness.
