These easy No-Bake S’mores bars call for just 4 basic ingredients and bring the best part about camping in the comfort of your home! Quick, simple, so delicious, and fun to make!

It isn’t everyday that I share a recipe calling for multiple packaged items, but you know what they say… S’mores are worth the indulgence.

In all seriousness, I do think going with the flow of your cravings from time to time is worth more than constantly holding out. For me, s’mores are one of those occasional treats that I give myself a hall pass. Why? They mostly only happen during camping trips.

Which leads me to my next point.

This easy No-Bake S’mores Bar recipe cuts to the chase and ensures you get your s’more fix without the requirement of a campfire.

The way I see it, this special treat is perfect for 4th of July gatherings, or really any food gathering during the summer where you’re looking for a s’mores guarantee rather than a hope and a prayer.

As always, the simple ingredients can be found at any grocery store, and there are plenty of options to change up each ingredient to suit your personal dietary needs. 

Ingredient Notes:

Salted Butter: Needed to help melt the marshmallows to a creamy consistency. Melted butter also adds luscious flavor to the bars and should not be skipped.

When using unsalted butter, be sure to sprinkle some salt into the graham mixture in order to enhance the flavor. Or, top the bars with flaky sea salt.

Mini Marshmallows: Marshmallows are needed to act as the glue that holds everything together and to mix into the bars for the marshmallow portion of the s’mores. In this sense, there is some double marshmallow action going on.

You can use regular marshmallows for the marshmallow filling if you would prefer, but I recommend sticking with mini marshmallows for adding in later because they mix in easily.

Graham Cereal: Pick your favorite graham cereal that mimics graham crackers. Golden grahams is a good option. I use Catalina Crunch Honey Graham cereal, which contains protein and is sugar-free.

Hershey’s Bars or Chocolate Chips: Use semisweet chocolate chips or chopped up Hershey’s chocolate bars for the chocolate portion of the recipe. If you prefer dark chocolate, feel free to make the switch! Add extra chocolate chips if you love a chocolate-forward treat.

Recipe Adaptations:

  • Add ½ cup of chopped pecans or walnuts if you enjoy a nutty crunch.
  • Swap out the chocolate chips for peanut butter chips, mint chips, butterscotch chips, etc. if you aren’t attached to the s’mores theme.
  • For a dairy-free option, swap the butter for coconut oil.
  • Rather than using cereal, you can chop up graham crackers into small pieces or pulse graham crackers in a food processor until they are roughly chopped.

How to Make No-Bake S’mores Bars:

Line an 8-inch square pan with parchment paper. Or, spray the pan with cooking spray.

Melt the butter in a large saucepan over medium heat. Add in 3 cups of the marshmallows and continuously stir until the marshmallows have dissolved and you’re left with a creamy mixture. If the butter or marshmallows begin melting too fast, reduce the stove top to low heat.

Immediately remove the saucepan from the heat and stir in the cereal until everything is well combined. This whole process should only take 2-3 minutes. It goes quick!

Transfer the s’mores mixture to the prepared pan and use a spatula or a wooden spoon to press it into an even layer.

Refrigerate for 1 hour or until the bars are completely set up.

Pull on the parchment paper to release the bars from the pan and lift the whole batch onto a cutting board for easy slicing. Use a sharp knife to cut individual squares. Serve and enjoy!

Storage Options:

  1. Room Temperature: After the bars have set up in the refrigerator, they can be stored at room temperature for up to 3 days in an airtight container or wrapped in plastic wrap. Note that if your home is very warm, the chocolate will melt, in which case, the bars should be stored in the refrigerator.
  2. Refrigerator: Keep in the refrigerator for up to 10 days. When you’d like to enjoy a treat, place it on the counter to come to room temperature for at least 10 minutes.
  3. Freezer: For longer term storage, freeze leftover s’mores bars in a freezer bag for up to 3 months.

The next time you’re craving a classic treat and you’d rather not turn on the oven, whip up a batch of these easy s’mores cookie bars! I recommend making a double batch if you want leftovers, or if you’re serving more than 6 people, as these beauties are positively addictive!

*Use Golden Grams, Catalina Crunch Honey Graham cereal, etc.
**Use however much chocolate you think you’ll like! Some like it light and some like it heavy on the chocolate. I use about 6 ounces. You can also use 2/3 cup to 1 cup of semisweet chocolate chips if you prefer chocolate chips over Hershey’s Bars.
