These Thai-inspired Ground Turkey Broth Bowls feature well-seasoned ground turkey in an aromatic coconut milk broth for a healthy meal that is full to the brim with flavor. Packed with lean protein, healthy fats, carbs, and some fiber for a well-balanced meal!

Have you seen the broth bowl trend floating around social media? I began seeing recipes for various kinds of broth bowls a few weeks ago, and knew I had to make my own rendition.

The concept is simple: Some form of ground meat gets cooked up with seasonings, then served in a bowl with rice and a flavorful rich broth poured on top.

I immediately knew I wanted to take a Thai-style approach to this extravaganza, because coconut milk based broths are my absolute favorite.

So I seasoned the ground turkey with big bold flavors like onion, garlic, ginger, and coconut aminos (more on that later), and whipped up an easy Thai style coconut milk broth with red curry paste and lime.

I even tossed some green beans into the mix, because: fiber.

The end result is the most fabulously flavorful meal that I fully intend to make again. The best part about these bowls is that they are so magically versatile and you can customize them with all sorts of flavors and additions.

How to Make Ground Turkey Broth Bowls:

Broth Ingredients:

Chicken Broth: Pick any kind of broth you love to create a soupy consistency. I like using chicken bone broth, but any kind of chicken stock, beef stock or vegetable broth works too.

Full-Fat Canned Coconut Milk: The creaminess of the broth comes from full-fat canned coconut milk.

Lime Zest and Lime Juice: A little burst of sour citrus adds tanginess to the broth, which helps offset the richness to provide a burst of freshness.

Red Curry Paste: This is what brings the majority of the curry flavor and it is a combination of chiles, garlic, ginger, and more. You can also use green curry paste or substitute for yellow curry powder.

Fish Sauce (Optional): Customary in Thai cooking, fish sauce brings a deeply rich umami flavor and some salt content. If you don’t typically have it on hand, you can skip it, or substitute for a splash of soy sauce.

Ground Turmeric: This optional ingredient adds some anti-inflammatory characteristics and gives the broth a yellow hue. It is optional!

Ingredients for the Ground Turkey:

Lean Ground Turkey: The main ingredient here, ground turkey provides a big boost of protein. Seasoning it up with onion, garlic, ginger, and coconut aminos makes it the most magical protein source!

Green Beans: While many of the broth bowls I’ve seen don’t include veggies, I like tossing some in for some added fiber and micronutrients. 

Aromatics: Yellow Onion, Fresh Garlic, and Ginger: These three ingredients elevate the flavor of the meat tremendously! They contribute to the Thai theme and make the whole meal so tasty.

Coconut Aminos: In case you aren’t familiar, coconut aminos is a substitute for soy sauce that is simply nectar (natural sugars) from coconuts. It has a sweet and an umami flavor. Substitute it for equal-parts soy sauce and brown sugar (or pure maple syrup) if you’d like.

For the Bowls:

Cooked White Rice or Brown Rice: Pick your carbohydrate base. I do steamed white rice or brown rice, but quinoa works too. Use cauliflower rice for a low carbohydrate alternative. 

Green Onions: Add a burst of fresh onion flavor that isn’t overpowering.

Red Pepper Flakes (optional): Spice it to your personal taste with red pepper flakes. If you prefer mild food, skip it!

Recipe Customizations:

  • Double the amount of broth if you want your bowls to be soupier.
  • Add more vegetables or switch the vegetable selection using any fresh vegetables you enjoy. Broccoli, cauliflower, carrots, zucchini, and bok choy are all good options.
  • Use ground beef, ground chicken, or ground pork instead of ground turkey.

How to Make Ground Turkey Broth Bowls:

Prepare the Broth:

Add all of the ingredients for the broth to a saucepan and heat it over medium-high heat. Bring it to a full but controlled boil and cook for 3 minutes. Reduce the heat to low and keep broth warm while preparing the rest of the recipe.

Cook the Ground Turkey:

Heat the avocado oil in a large skillet over medium-high heat and add the chopped onion. Sauté, stirring occasionally, until the onion begins to turn slightly golden-brown, about 8 minutes.

Add in the chopped green beans, minced garlic, ginger and continue sautéing another 5 minutes, or until the beans begin to soften.

Transfer the raw ground turkey to the skillet and use a spatula to break it into smaller chunks. Brown the meat until it is almost entirely cooked through.

Add in the coconut aminos and continue cooking, stirring occasionally, until much of the liquid has evaporated and the turkey is cooked through, about 4-5 minutes.

Assemble the Bowls:

Load up your bowls with cooked white rice or brown rice, your desired amount of ground turkey, and ladle broth over everything. Garnish with chopped green onions and red pepper flakes and enjoy!

Store leftovers in an airtight container in the refrigerator for up to 5 days. I put all of the leftovers in the same container, but you can store them in separate containers too.

Recipe Tips

  1. If you’re great at multi-tasking, prepare the broth while you’re sautéing the onion for the ground turkey. There is plenty of time to do both at the same time.
  2. Turn it into a meal prep recipe by adding your desired amount of each component to a meal prep container to take to work with you. There is no need for separate containers here unless you are okay with the extra work.
