For the Ground Turkey:
- 2 Tbsp avocado oil
- 1 yellow onion finely chopped
- 1 pound lean ground turkey
- 2 cups green beans trimmed and chopped
- 2 large cloves garlic minced
- 1 Tbsp fresh ginger peeled and grated
- 3 to 5 Tbsp coconut aminos to taste
- Sea salt to taste
For the Bowls:
- 2 to 3 cups cooked white rice
- 3 green onions chopped
Cook the Ground Turkey:
Heat the avocado oil in a large skillet over medium-high heat and add the chopped onion. Saute, stirring occasionally, until the onion begins to turn slightly golden-brown, about 8 minutes.
Add in the chopped green beans, minced garlic, ginger and continue sauteeing another 5 minutes, or until the beans begin to soften. Transfer the raw ground turkey to the skillet and use a spatula to break it into smaller chunks. Brown the meat until it is almost entirely cooked through. Add in the coconut aminos and continue cooking, stirring occasionally, until much of the liquid has evaporated and the turkey is cooked through, about 4-5 minutes.
