Raw Shrimp: The star of the show here, we need a pound of shrimp. You can either leave the shells and tails on or remove them. I prefer removing them beforehand, myself, for easy consumption. You’ll also want to de-vein the shrimp prior to cooking them if you didn’t buy deveined shrimp.

Avocado Oil: Because we’re searing the shrimp at a high temperature, we need a quality high-temperature cooking oil. I like using avocado oil due to its neutral flavor and high smoke point. Plus, it contains a good source of omega-3 fatty acids.

I don’t recommend using olive oil, because it burns around 300 to 350 degrees F and we sear between 400 and 500 degrees F. 

Fresh Garlic: The ingredient that always makes everything pop, fresh garlic is here to serve as one of the predominant flavors.

Lemon Juice: The best sidekick to garlic, we need fresh lemon juice for that acidity to balance out the buttery flavors.

Butter: The rich, creamy goodness that makes these shrimp so undeniably great. Feel free to increase the amount to your personal taste.

Paprika: A little paprika adds a subtle smokey flavor, which brings a little nuance to the table.

Sea Salt: Season to taste with sea salt and black pepper.

Recipe Customizations:

  • Skip the butter for a dairy-free option.
  • For a kick of spice, add a little cayenne pepper or red pepper flakes. 
  • If you have fresh herbs such as fresh parsley, fresh cilantro, or fresh basil on hand, feel free to give them a chop and toss them in.

Add the garlic and sauté until very fragrant, about 3 to 4 minutes. Remove from the heat, stir in the lemon juice, and set aside while you cook the shrimp in another skillet.

  1. Be sure to keep track of the time, because shrimp turns rubbery if it is cooked for too long. For this reason, be prepared to cook fast and thoroughly. 
  2. For more sauce to make shrimp scampi, add ¼ cup of chicken broth, ¼ cup of dry white wine such as sauvignon blanc, and another 2 tablespoons of unsalted butter. You can use this sauce to toss with pasta noodles to make shrimp pasta, or serve over risotto or steamed rice.
  3. If you want to save time, you can add the butter and garlic to the skillet with the shrimp after the shrimp have seared on both sides. Be careful not to overcook the shrimp when exercising this option.
  4. Always cook shrimp in a single layer to ensure even cooking. Shrimp cooks quickly, so it is difficult to achieve the best results when the pan is overcrowded.

How can I avoid overcooking shrimp?
