2015, baby! Fifteen years after the turn of the century! Who here thinks that’s cuh-razy?! Who here’s too hungover, drunk, or asleep to care? I hear ya, smalls, have a salad. Well…maybe have a salad made out of bacon before advancing to the raw vegetables.

At the beginning of 2014, I posted a 50 Detox Smoothie and Juice Recipes roundup, which you all slurped down so hard, I barely knew what hit me.

This year, I figured I would give you some ideas for healthy entrée salads that can be devoured any time of year. These salads are packed with nutrients and are actually filling, making them great meal ideas for the start of the New Year.

  1. Here’s a true story. When my cousin and I were in the 6th grade (so, like 1969 or so), we were talking about the year 2000. We looked at each other, and Cindy says, “I figure we’ll be dead by then. We’ll be something like 43 by then.” At that point, the only people we knew that old were our grandparents, and every year at Christmas we heard that we had to go over there because you never knew if they were going to be around the next year (guilt 101). So, we figured they had one leg in the grave and another on a banana peel (side note: Grandpa lived to be 95). Anywho, here we are. 15 years later and both of us are still kicking. Time goes faster every year. And, I better start eating your salads or I’ll have to alter my dress and not in the way I want to. This turned into an epistle. Sorry about that.
