Somebody took a stroll down the aisle all dressed in white with something borrowed, something blue, something old and something new recently. And that fine lady was Becca from Amuse Your Bouche!  Becca’s far and away, honeymooning with her husband, so I’m over on her blog guest posting my face off while she celebrates her marriage.

Since Becca and I both love a good veggie dish, and because I’m obsessed with roasting, I made this riiiidick Roasted Cauliflower and Chickpea Quinoa Salad (breathe in) with Jalapeño-Lime Dressing (breathe out) to share over on her site.

Every person who laid mouth on this salad went ape-like over it. As in talk-with-your-mouth-full, communicate-in-grunts, banging-on-your-chest-bang-bang-gorilla ape-like. If Jane Goodall were reading this, she’d be like, “whaaaaaaaaaaa? hold the phone!”

Roasted Cauliflower and Chickpea Quinoa Salad with Jalapeño-Lime Dressing

I remember hearing at some point there’s a difference between gorillas and apes, but today’s Sunday Fun-Day so that’s a google search that will have to wait for another day.

This Quinoa salad. In order to prep this hallowbaloo, you do some fine and fancy roasting of the cauliflower and the chickpea and whisk together a worthy-of-praise jalapeño-lime dressing. You toss it all together in a banana boat load of quinoa, add some fresh herbage and roasted almonds, and let the chest-banging begin.

Okay, you don’t toss everything in a banana boat. I just said, “banana boat,” because as previously mentioned, this quinoa salad makes you bang on your chest like a straight up gorilla. Gorillas eat bananas. Right, Jane Goodall? Right. I’ll stop it with the animal talk now. This isn’t a zoo.
