Ingredients for Oatmeal Chocolate Chip Bread:

Quick Oats or Oat Flour: Taking the place of all-purpose flour, we use rolled oats, old-fashioned oats, quick oats, or oat flour for some complex carbohydrate action.

Use certified gluten-free oats for gluten-free chocolate chip bread. I use gluten-free sprouted oats.

Eggs: Helps the batter rise to a fluffy texture.

Cottage Cheese: Brings moisture and protein to this healthy chocolate chip bread!

Pure Maple Syrup: The sweetener here!

Avocado Oil: A boost of fat brings a moist crumb and richness.

Pure Vanilla Extract: Adds warm flavor.

Ground Cinnamon: A lovely complement to chocolate, I love the addition of cinnamon. Itโ€™s entirely optional, though!

Baking Powder: The leavening agent to help the batter rise.

Sea Salt: Big flavor enhancer.

Recipe Customizations:

  • Swap the cottage cheese for Greek yogurt or sour cream if youโ€™d like.
  • For sweeter bread, add 1 to 3 tablespoons of brown sugar or coconut sugar.
  • Use coconut oil, olive oil, or melted butter instead of avocado oil.

How to Make Oatmeal Chocolate Chip Bread:

Preheat the oven to 350 degrees Fahrenheit and line a 9โ€ x 5โ€ loaf pan with parchment paper.

Transfer the oats to a high speed blender and blend for 1 minute, or until a flour forms. Add the baking powder, ground cinnamon, and sea salt to the blender and blend for another few seconds to combine all of the dry ingredients.

In a large bowl, whisk together the cottage cheese, eggs, pure maple syrup, avocado oil, and vanilla extract (wet ingredients).

Pour the dry ingredients into the large mixing bowl with the wet mixture and mix well. Stir in the chocolate chips.

If you’re able, toss the chocolate chips in 1 teaspoon of gluten-free all-purpose flour or regular all purpose flour prior to adding them to the batter. This prevents them from sinking during the baking process.

Transfer the quick bread batter to the prepared loaf pan. Cover the pan with aluminum foil and bake for 40-45 minutes.

Remove the foil and bake for another 10 to 15 minutes, or until the bread is baked through. Insert a digital thermometer into the center of the loaf to check its internal temperature. If it is 190 degrees F or higher, it is ready!

Allow the bread to cool to room temperature before slicing and serving.

I like warming up a thick slice with a pat of butter for the ultimate afternoon snack.

Storage Options:

  1. Room Temperature: Cover the bread pan with plastic wrap and store on the counter for up to 2 days.
  2. Refrigerator: Transfer leftovers to an airtight container and refrigerate for up to 5 days.
  3. Freezer: Cut the remaining loaf into individual slices and transfer to a large zip lock bag or freezer-safe bag. Freeze for up to 3 months for longer storage.
