Today’s my last full day in Alaska, and I already know I’ll be missing this incredible state.

My soul strings have bonded to my Muck boots so hard, I may just have to wear them back home even thought it’s still summer status in Reno.

My taste bud stings have bonded to the seafoods (HELLO fish and chips, clam jambalaya, salmon sashimi, tacos, lox, chowder, etc, etc).

I’m looking forward to sitting down with my {{literally}} thousands of photos for a nice long reflection and editing sesh, and sharing some of them with you right here.

In the meantime: finger food.

I have to admit, the term, “finger food” conjures up visuals in my mind space that look nothing like food.

I kinda shudder when I hear it spoken out loud. 

Nevertheless, my finger-licking friends, that’s exactly what these little finger sandwiches are.

They are, in point of fact, finger food.

But wait, there’s more.

My intention for this recipe is multi-fold.

The way I see it, these finger sandwiches are a perfect vegan/vegetarian option for any or all of the following: random picnic or barbecue gathering, football party, baby shower, girl’s night in, boy’s night in (just add bacon bahdehadeha), not to mention…

You can turn these into a full blown, full fledged, full-sized sandwich. Of normal portions, not finger-sized portions.

Now that school is back in sesh, I’m envisioning these being a staple in the after school snack arena.

You can put the mashed avocado on crackers. You can put it in a pita.

You can do things with it I don’t even know about.

Need to apply gluten-free bread or tortillas to this apparatus? You do you.

The recipe? So simple. You mash avocado with fresh herbs. I like using sage, basil, and thyme, but you can go with any herb combination. No mayo required. No funny business. Just you, some real food, and your fingers. <- sorry.

Top with cucumber and sprouts, because: refreshment.

Mashed Avocado Finger Sandwiches

Mashed Avocado Finger Sandwiches are fresh and fun appetizers that are vegan and gluten-free!

Servings: 16 finger sandwiches

Ingredients

  • 3 large ripe avocados peeled and diced
  • 1/4 cup to 1/3 cup fresh herbs finely chopped
  • 2 tablespoons fresh lime or lemon juice
  • 2 tablespoon tahini
  • 1/4 teaspoon sea salt to taste
  • 8 pieces gluten-free or whole grain sandwich bread crusts removed
  • ½ medium cucumber thinly sliced (16 slices)
  • 1 carton sprouts or microgreens

Instructions

  • Add all of the ingredients for the mashed avocado to a mixing bowl and use a fork to mash everything together to desired texture (I leave the mixture fairly chunky).
  • Cut the crusts off of 8 slices of whole grain bread (or bread of choice) and chop each slice into 4 equally-sized squares. Make finger sandwiches by spreading 1-2 tablespoons of the mashed avocado mixture on half of the bread squares. Top with one slice of cucumber, sprouts, and place the remaining slices of bread on top. Serve and enjoy!

    1. Hi Leah! My personal preference would be to prepare the sandwiches soon before serving them. You can prepare the avocado mix 6 hours in advance and store it in an airtight container, but I wouldn’t prepare it any sooner than that 🙂 Enjoy!
