Ah hey!

We’re back in Colorado visiting friends and poking around Rocky Mountain National Park this weekend. Just in time for chilly fall weather to sweep through and make a little mountain vacation extra cozy.

This week, we have nothing but comfort food for you! Way I see it, we all need to build up our winter hibernation layer to keep ourselves warm, so why not do so through nourishing, nutritious winter squash-infused foods? So put on those fuzzy socks, make yourself a hot mug of tea, and get to carb-ing! Chipotle Butternut Squash and Swiss Chard Enchilada Casserole from Eats Well With Others

Prep Ahead Tip: The enchilada sauce can be made ahead of time and stored in the fridge until ready to use. Additionally, the filling (roasted butternut squash and sauteed chard) can be prepared ahead of time so that the day of baking it all you have to do is assemble the casserole.

Vegan/Gluten-free Substitutions: To make this vegan, substitute vegan cheese for the cheddar cheese. It is already gluten free.
