For the Salad: chickpeas (also known as garbanzo beans), English cucumber, cherry tomatoes, red onion, and feta cheese.

This combination of ingredients makes for a light, refreshing, and also flavorful bean salad.

Chickpea Salad Dressing: Avocado oil, fresh lemon juice, garlic, salt, black pepper, and dried oregano yield a zesty, herby simple vinaigrette that is both simple yet fresh and flavorful. 

Recipe Customizations:

  • The avocado oil can easily be replaced with olive oil or vegetable oil.
  • Replace the lemon juice with cider vinegar, red wine vinegar, or rice vinegar.
  • To make this a vegan chickpea salad recipe, simply omit the feta cheese.
  • Add additional fresh veggies. If you add a lot of extra veggies, increase the amount of dressing to accommodate the added volume.
  • Toss in sun-dried tomatoes, kalamata olives, capers, artichoke hearts, green onions, fresh parsley, fresh dill, fresh mint, red pepper, green pepper, creamy avocado etc. to bring an even bigger flavor.

Ingredients 

  • 1 (15-oz) can garbanzo beans, drained and rinsed
  • 1 medium-sized cucumber, chopped (2 cups)
  • 2 cups cherry tomatoes, halved
  • ¼ red onion, thinly sliced (½ cup)
  • cup feta cheese

Dressing:

  • 2 Tbsp avocado oil
