  • 10 eggs beaten
  • 4 slices thick cut bacon chopped
  • 1 pound asparagus trimmed and chopped into 2-inch pieces (about 2.5 to 3 cups)
  • 1/2 cup red onion finely chopped
  • 1/8 teaspoon to 1/4 sea salt
  • Avocado and red onion for serving optional
  1. Preheat the oven to 400 degrees F.
  2. Add the eggs to a mixing bowl and whisk well.
  3. Add the chopped bacon to a 10-inch cast iron skillet (or oven-safe skillet) and cook bacon over medium heat until it begins to crisp up, about 4 minutes.
  4. Add the onion and asparagus and saute until asparagus begins to turn bright green, about 3 to 4 minutes.
  5. Pour the beaten eggs into the cast iron skillet, and place skillet on the center rack of the oven. Bake for 20 to 25 minutes, or until eggs are cooked through.
  6. Allow frittata to sit 10 minutes before cutting large slices and serving with avocado and red onion.
