  1. Preheat oven to 350 degrees F.
  2. Prepare a 9”x9” cake pan or baking dish by lightly coating it in oil or lining it in parchment paper.
  3. In a large mixing bowl, whisk together the eggs, olive oil, coconut milk, vanilla extract and balsamic vinegar.
  4. In a separate bowl, whisk to combine the brown rice flour, oat flour, sugar, cacao powder and baking powder.
  5. Pour the wet mixture into the dry mixture and mix until combined.
  6. Fold in the fresh blackberries (and chocolate chips if you’re using them).
  7. Pour batter into the prepared baking dish and bake for 42 to 50 minutes until center tests clean.
  8. Wait 15 minutes before cutting in and serving.
