My love for scones goes way, way back. In fact, the first recipe I ever posted on this blog was Almond Flour Ginger Scones with Honey Orange Frosting ..Followed years later by Raspberry Vegan Scones, Gluten-Free Maple Walnut Scones , and Vegan Pumpkin Scones with Coffee Glaze.

WELL, recently I seem to have gone on another scone bender, posting Paleo Vegan Lemon Poppy Seed Scones, Paleo Cranberry Orange Vegan Scones, and Paleo Pecan Chocolate Chip Scones all within the last few months.

Suffice it to say, the love for scones is real. I always make them gluten-free and dairy-free. Most of the time, I go egg-free for a vegan version AND often grain-free for a paleo version. Basically, we’ve got scone options.

If you’ve been a long-time follower, it’s no mystery that my Almond Flour Pancakes have been one of my most popular recipes of all time. 

Because many of you have an egg allergy or follow a vegan lifestyle, I thought it only appropriate to re-make my classic almond flour pancakes into a vegan version. 

The swap for eggs couldn’t be any easier – I simply whip up two “flax eggs” using ground flax seed and water as a replacement.

Serve these beauties up with a dollop of vegan “butter” spread and pure maple syrup (or regular butter if you can do dairy), and dive into the fluffiest, moistest egg-free pancakes that ever did exist!

If you’re struggling to keep mealtimes interesting, I gotchu! I have found the key to maintaining a “healthy” diet AND not getting bored with food is in simply changing up the flavors. Recently, I’ve been on a teriyaki kick. The salty-tangy-sweet-umami flavors really hit your palate in all the right ways!

I make my homemade Paleo Teriayki Sauce  (or use this store-bought brand <- not sponsored) and use it as a marinade for meat, or for stir frying vegetables. Let’s face it..sometimes I douse rice with it and call it a day.
