Sauté the onion in a large pot, then brown the ground turkey meat.

Stir in the vegetables, broth, diced tomatoes and seasonings. Bring the pot to a full boil then reduce the heat and cook for 20 minutes.

Add in the baby spinach. Cover the pot and cook 2-3 minutes, until the spinach has wilted.

Stir the soup well, season to taste with salt and pepper, then serve in big bowls and enjoy!
