Chipotle Ranch Dressing:
- 1 large ripe California avocado peeled and diced
- 1/2 cup full-fat canned coconut milk
- 1/4 cup fresh lemon juice
- 1/4 cup water
- 3/4 teaspoon chipotle powder
- 1 teaspoon dried dill
- 1 teaspoon dried oregano
- 1 teaspoon dried parsley
- 1 teaspoon dried chives
- 1/2 teaspoon sea salt to taste
Cobb Salad
- 5 ounces Spring greens
- 2 slices thick-cut bacon cooked and chopped
- 2 hard-boiled eggs peeled and chopped
- 1 ripe avocado peeled and sliced
- 1 cup red cabbage thinly sliced
- 1 cup cherry tomatoes halved
- 2 large radishes thinly sliced
Cook the Chicken:
Heat the oil over medium heat in a skillet and add the chopped chicken. Sprinkle with chili powder and sea salt. Cook, stirring occasionally, until chicken has cooked through, about 5 to 8 minutes. Remove from heat and set aside.
