Sauté the onion, bell pepper, carrots, garlic and ginger in a large pot.

Brown the ground turkey and break it into small chunks. Add the curry powder, and liquids and bring the soup to a full boil.

Add in the chopped cabbage, cover, and cook until wilted, about 10 minutes.

Transfer the baby spinach to the pot. Cover, and cook until wilted.

Taste the soup for flavor and add more salt, lime juice, or curry powder to taste. Serve and enjoy!
