– cauliflower – russet potato – egg – parmesan cheese – breadcrumbs (GF if need be) – salt & pepper

Stir together the ingredients for the yogurt dipping sauce in a bowl and refrigerate until ready to use.

Roast the cauliflower and the potatoes, then transfer them to a food processor and blend.

Transfer the blended cauliflower and potatoes to a mixing bowl and mix in the remaining ingredients.

Form patties out of the potato mixture and dip both sides of each patty in breadcrumbs.

Bake at 400 degrees F for 25 minutes or until the potato cakes are crispy. Serve with dipping sauce and enjoy!
