Watermelon Feta Salad Recipe

This cooling summer salad is loaded with refreshing flavors and textures for a light yet ultra satisfying side dish. Pair it with grilled chicken, salmon, pork tenderloin, or steak for a magical meal!

Ingredients

  • 2 cups watermelon chopped into cubes
  • 1.5 cups cherry tomatoes halved
  • 1 cucumber peeled and cut into slices, about 1.5 cups
  • ¼ cup red onion thinly sliced
  • 1 cup feta cheese chopped into cubes*
  • ½ cup pistachios chopped

Lemon Parsley Dressing:

  • ¼ cup olive oil or avocado oil
  • 3 Tbsp fresh lemon juice
  • 3 Tbsp fresh parsley
  • 1 small clove garlic minced
  • Sea salt and black pepper to taste

Instructions

  • Transfer the watermelon cubes, chopped tomatoes, cucumber, red onion, feta cheese, and pistachios to a large mixing bowl.
  • In a small bowl or measuring cup, mix together the ingredients for the dressing until well combined. Pour the dressing over the salad and toss well until everything is coated in dressing.
  • Serve immediately alongside your main dish, or refrigerate until ready to use.

Notes

*You can also use feta cheese crumbles
